Peanut Maple Chicken with coconut rice LOW FODMAP

Marinade

  • 15 g ginger, peeled
  • 100 g peanut butter (smooth)
  • 80 g soy sauce
  • 50 g Maple syrup
  • 20 g sesame oil

Chicken Veg and Rice

  • 400 g chicken tenderloins, cut into bite size pieces
  • 400 g coconut milk tin
  • 250 g rice
  • 300 g water
  • 400 g mixed vegetables, (capsicum, carrot, zucchini, broccoli)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add ginger to bowl and chop 3 seconds, speed 7.

  2. Add sesame oil and saute 1minute, 100 degrees, speed 1.

  3. Add peanut butter, soy sauce and maple syrup and mix for 10 seconds on speed 5.

  4. Set aside approximately half of the marinade. Add the chicken to the thermomix bowl (with remaining marinade) and mix 10 seconds Counter-clockwise operation, speed 1.5.

  5. Place coated chicken on varoma tray. Do not rinse thermomix bowl.

  6. Add coconut milk and water to bowl. Insert simmer basket. Add rice (no need to rinse). Place Varoma with chicken into position and cook 15 minutes, Varoma temp, speed 3.

  7. Stir chicken and sprinkle with sesame seeds if using. Add vegetables to varoma dish. Cook 8 minutes, Varoma temp, speed 3.

  8. Check chicken and vegetables are cooked and set aside in thermoserver. Set aside rice in thermoserver.

  9. Drain the "sauce" into a jug. Add 200g of this reserved sauce into thermomix bowl. Add the reserved marinade and cook 2minutes, 100 degrees, speed 3. Pour over the chicken/veg/rice and serve.

    Yatesh:It has been a while since you asked your question so you may have worked it out - it is because you only need 200g of the sauce left in the Thermomix bowl - so really you are pouring it out into a jug so you can measure only 200g back into the bowl (and then you can use the rest of the sauce for another recipe if you don't want to discard it). Add the marinade and carry on with the recipe. Hope this helps you understand

    Nicole, I don’t understand why you have to pour he sauce into a jug, pour the reserved marinade into the Thermomix bowl and then put the sauce back in the jug. Why wouldn’t you just at the reserved marinade into the sauce in the jug?

    I was looking for a low FODMAP meal. This was quite nice. Flavors I would normally have. I did however leave out the capsicum and peanut butter as that would have been way too much flavor. The only vegetables were carrot an broccoli. I was a bit confused about which trays to put chicken and veggies on. I think I got it right though. My only disappointment was the amount of dishes at the end. Thanks for a lovely recipe.

    its like a nice satay... I nearly ran out of liquid in the jug during cooking but i think this is because there was a fair bit of veggies and i had brocoli. I had to wing making the sauce at the end by adding half a can of coconut milk to the left over marinade.
    if you put brocoli in put it in with the chicken at step 5.
    toast the sesame seeds for crunch
    maybe a bit more maple syrup, soy and add chilli.
    Im going to try tweeking it that way next time
    otherwise not bad. my boy loved it and he's hardest to please

    Yikes Nicole I blew it right out of the water didn't I! Ah well. My Mum would have loved it just as you wrote it! She kinda worked out her own low fodmap diet! (didn't exist as such years ago) for IBS knew what did and didn't agree with her system!

    For my hoard howerver : a added 2 x cloves garlic and 1 x onion chopped fine 

    Then substututed: lime Ginger honey for maple syrup; as had no maple syrup

                                Coconut flavoured evaporated milk for coconut milk, again due to lack of cocnut milk 

    also sued what fresh veg I had. Culiflower,Brocoli, carrot, mushrooms 

     

    I know this some what defeats the FODMAP purpose But hey It tasted great, thank you for posting Nicole

    I love this recipe.  I started a low fodmap diet a while ago and was really struggling to find something with so much flavour.  My husband regularly asks for this meal and he doesn't even have to eat low FODMAP.  It's definitely a winner.  So easy too. Delicious.

    The most delicous dinner I have cooked in my TM5 yet, and I had all the ingredients in my pantry without having to go to the shops (the only thing I didnt have was sesame oil - so substituted for Peanut oil) !!   

    Loved by everyone (very hard to please fussy husband, two teenagers and a 2year old - and this was a hit with EVERYONE !) Thankyou so much for this fantastic recipe - this will be a regular !

    Great dinner. I didnt have maple syrup so used about 1tbs golden syrup. Also used brown rice and it didnt cook through - thats my fault though - I'm still learning how to use my machine - in future I'll cook for an extra 3-5 minutes. Will definitely be making again.
