Perfect midweek chicken and leek

Ingredients

  • 200 grams leek, roughly chopped
  • 1 clove garlic, peeled
  • 1 cm square of ginger
  • 200 grams mushrooms, sliced
  • 1.5 tbsp paprika
  • 600 grams chicken, sliced into strips
  • 350 grams water
  • 30 grams coconut oil
  • 270 grams coconut milk
  • 100 grams quinoa
  • Choice of mixed green vegetables

Recipe's preparation

    METHOD
  1. 1. Add leek, garlic and ginger to mixing bowl and chop for 3 secs / speed 7

    2. Add coconut oil and saute for 3 mins / Varoma / speed 1

    3. Add coconut milk, mushrooms, paprika, chicken, water, quinoa and cook for 7 mins / varoma / reverse / speed 1

    4. Add green vegetables to varoma, set into position and cook for a further 10 mins / varoma / reverse / speed 1

    5. Place vegetables and chicken mix into Thermoserver and let sit for 5 mins (alternatively, let mixture sit in Thermoserver and then place over vegetables in bowls to serve)

    6. Serve warm

    Was delicious with a few changes. Found this to be too runny so added 2T cornflour in a little water at the end and cooked for an extra 4mins. Also added 1tsp garlic powder, 1T of Cumin & 1T stock for extra flavour when I added the paprika.
    Next time will add more veg in with the mushroom instead of steaming in varoma.

  • I found this quite bland and

    I found this quite bland and needed to add plenty of salt and pepper to the dish to give it a kick. Easy enough to make though and it wasnt terrible tasting, I just dont think I will make again.
