  • 1/2 brown onion
  • 2 cloves garlic
  • 40 g oil
  • 1/4 teaspoon Clove powder
  • 1 tablespoon vegetable stock, EDC
  • 500 g Pork Strips, cut approx 3cm
  • 1 eggplant, cut approx 3cm
  • 200 g Diced tin Tomato
  • 4 sprigs corriander, chopped

Recipe's preparation

    PORK AND EGGPLANT
  1. Place onion and garlic in TM bowl and chop 2 sec, speed 6. Scrap down side of bowl with spatulaAdd oil, cook onions and garlic 2min/varoma/speed 2Add clove powder, stock and pork and cook 8min/varoma/Counter-clockwise operation/speed 1

    Add  eggplant and diced tomato cook 20mins /varoma/Counter-clockwise operation/speed 1

    Put basket on top to stop the sauce from splattering

    Pour into thermoserver.Add coriander and close lid and let sit for 3 min before serving with white fluffy rice.

    Absolutly delicious.

    I was abit hesitant as I wasnt sure of the flavours but I had an eggplant to use and defrosted pork so I gave it a go.Everyone ate it and loved it.

    I used passata instead of diced tomatoes and the sauce was alot thicker then the photo but we all loved it. I also made it with steamed veg instead of rice tmrc_emoticons.)

  • Was delicious.  Didn't have

    Was delicious.  Didn't have any clove powder so used a Thai herb mix.  Also served it on a quinoa salad that was heated up.  Everybody loved it.  Quick and easy as well.

  • Mine looked a little

    Mine looked a little different as I used left over roast pork I added at the end, tin tomatoes and baby eggplant and some whole cloves I could of crushed them I guess but didn't.  Despite these changes it was delicious, the flavours were perfect together. So it was a little thicker sauce the eggplant blended through but I liked that.  Quick easy dinner, I recommend green beans, broccoli or similar steaming on top at the same time. We are low carbs at mo, so no rice but cauliflower rice might be nice, goes with eggplant I think tmrc_emoticons.)
