Risotto with Chicken and Baby Leaf Spinach

  • 500 g chicken breast, Cut into approx 3 cm
  • 2 clove garlic, Can also use chopped garlic
  • 1 brown onion
  • 1 Rind from Lemon
  • 1 leek
  • 300 gram risotto rice
  • 30 grams olive oil
  • 1 juice from 1 lemon
  • 70 gram white wine
  • 760 grams water
  • 2 heaped tablespoons Vegetable stock paste
  • 120 grams baby leaf spinach
  • 4 heaped tablespoons parsley

  • 4 heaped teaspoons Grated Parmesan Cheese

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Step 1.Place Lemon Peel, onion, leek and garlic in mixing bowl, and chop 5 seconds/Speed 5.

    Step 2. Scrape down sides and add Olive Oil and Sauté 2minutes/100°/ Speed1.

    Step 3. Add Rice and Wine and toast for 2minutes/100°/Counter-clockwise operationSpeed1.

    Step 4. Add Water, Vegetable Stock Paste, chicken, and Lemon Juice then cook for 17 minutes/100°/Counter-clockwise operationSpeed 2.

    Step 5. Add Salt and pepper to taste.

    Step 6. Place Baby Leaf Spinach and Parsley at the bottom of a Thermoserver and pour over completed Risotto reciepe.

    Step 7. Serve into individual bowls and sprinkle grated Parmesan cheese on top!

Tip

Can add 100g of Mushrooms of choice also during the last 5 minutes of Step 4.

Serves 6.
Leftovers can be frozen to use at a later date.
