'ROAST' LAMB ALL IN ONE MEAL

Ingredients

ALL:

  • 1 brown onion
  • 6 cloves garlic
  • 2 sprigs rosemary
  • 10 gram olive oil
  • 1.3kg butterflied lamb roast
  • 1 tablespoon tomato paste
  • 1 tablespoon beef stock paste
  • salt, for seasoning
  • pepper, for seasoning
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 400 gram potatoes, medium sized, quartered, or sweet potatoes cut into thick wedges
  • 300 grams green beans
  • 3 teaspoon cornflour
  • 1.5 litres water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place Brown Onion, 3 cloves Garlic, 1 small sprig Rosemary (Leaves only) and olive Oil into the bowl.

    -Chop 3 sec/spd 7.

    -Saute 5 mins/115/speed 1.

    -Add Water up to 1.5l mark in bowl.

    -Put Varoma into place. Add Butterflied Lamb Roast to Varoma with 1 sprig Rosemary (leaves only)  and 3 cloves Garlic scattered over, Tomato Paste, Beef Stock, Salt and Pepper for seasoning. Sprinkle Balsamic Vinegar onto the Lamb.

    -Cook 80 mins/Varoma/speed 4.

    -Sprinkle Worcestershire Sauce over Lamb Roast and add potatoes to the varoma.

    -Cook for a further 18 mins/Varoma/speed 4.

    -Add Beans to the Varoma. Add 3 tsp Cornflour to the steaming liquid. Cook 5 mins/varoma/spd 4.

    This was delicious. I did the potatoes and took them out when I added the beans and crisped them up in the air fryer. The gracy was a bit too runny for me but nothing a little more corn flour won't fix Big Smile

    My god this was good, I'm a big fella and I ate about 700 grams of the meat and my slight partner ate the other 500 grams, not to mention we polished off all the potatoes, carrots, Brussel sprouts and beans, amazing, but the corn flour needs to be doubled, that's what I did and fantastic, looks like the Metamucil will get a work out tonight.

    Tried this "roast" lamb and was very sceptical. Need not have been - it was sensational. My husband said the gravy was the best flavour we've had but it wasn't as thick as we like it so next time I'll double the cornflour.

    I have used a lot of different cuts. Just check the meat during cooking time. Doing lamb shoulder tonight and it's tiny (ie 800g or so) so I just check the integrity of the cooking as I go and reduce as needed during the long cooking time. I sliced the shoulder also down the middle. Have done it before and it came out perfectly tmrc_emoticons.-)

    also over half of the jug is still full of liquid. I followed recipe exact I'm a bit confused is there supposed to be this much liquid??

    I tried this last night and it was lovely!  The gravy is very rich and has great flavour.  I put the lamb in the veroma and added carrots and potatoes on the tray then zuchinnis instead of beans at the end.

    This was fantastic! I admit I was sceptical, but it turned out perfectly. The gravy was absolutely delicious, meat tender and vegetables perfectly cooked. With two little kids underfoot and Easter lunch to prepare this was an incredibly stress free and delicious way to cook a 'roast'!

    This is a fantastic tasting recipe...the best meal I've ever cooked in the Thermie. The sauce is to die for....did I say it was to die for? It was a bit runny so I put more cornflour but it still was a bit too runny for my liking but apart from that delicious, delicious, delicious.

    Thanks for the hints. I did cook it and I did make a few adjustments. The little bit that was left over was still very tender and moist the next day.Great for a sandwich.Think it will be the only way to cook lamb in the future for me too.

    Again I have cooked this.. it's a no fail recipe.  Can be tweaked to your liking.  Tonight I added more cornflour to the sauce to thicken it - it was to die for! The meat, I cooked this time for 60 mins (smaller cut), then added the greens and ony cooked for a further 5 mins. the Lamb fell apart, the gravy was awesome, greens perfect!! Did the potatoes, carrots, parsnips and some other little bits and pieces in the oven.  O.M.G. the best feed ever! Thank you yet again, I can't stop sharing this one.. it's our favorite feed ever! Will never do a lamb roast any other way again.

    I've got a TM31 & a T5. If doing in your TM31, just make sure the liquid in the bowl does not exceed the max marker of 2l, which, in this recipe, it should not
