Satay Chicken Kid Friendly (Super Easy)

Ingredients

4 portion(s)

500gm diced chicken

  • 1 --- cup Hot Water
  • 1-2 tablespoons TM veggie stock concentrate
  • 4 heaped tablespoons Peanut Butter
  • 2 cloves garlic
  • 1 heaped tablespoons honey
  • 1 teaspoon curry powder
  • 1 onion
  • 1 tablespoon cornflour

Recipe's preparation

  1. 1. blitz garlic and onion in TM speed 5 for 5 sec

    2. add all ingredients to TM

    3. Cook Counter-clockwise operation/speed 1/17 minutes/100deg

    4. Chill out and read a book with the kids, have a shower, check FB while dinner cooks.

    Serve with steamed rice and steamed vegetables (we make it first with the steamed rice in the bowl and veggies in the varoma, and then keep them warm in a thermoserver while you cook the chicken)

    You can double the curry powder, Mr Fusspot is happy with 1 teaspoon.

    We use light smooth peanut butter, however you could use any variation.

    You could be a tad fancy and sprinkle some toasted peanuts and coriander to serve.

Tip

If you find the sauce is too runny for your liking, add another 2mins on the machine at 100deg and take the MC out.

    This is delicious. I made it using chicken breast and the majority of it shredded even after dicing into bigger chunks and putting it on reverse. Is the key to use thigh?

    Not sure what happened here but the chicken shredded quite considerably! I kept the chunks really big too...
    hopefully the taste makes up for it.
    added some diced carrot & beans for the last 3 minutes for some extra veggies

    This is my second time commenting, the last time was 5 years ago! I make this for my famiky weekly. I mince up whatever veg are in the fridge (usually carrot, leek, celery, zucchini and green capsicum), before I start. This bulks out the sauce, and increases the flavour. I also make Fructose Friendly by using garlic oil and sugar free maple syrup, and the curry powder from one of the cookbooks (Meals for Two, I think). We serve with pulse pasta, usually Red Lentil or Green Peas.

    I was disappointed when this turned out super powdery in texture. Very odd. Chicken shredded too I'd probably cook at a slower speed if I tried next time. Taste was ok I'm wondering if
    it was my all natural peanut butter that changed it

    Loved it! Used 2 heaped teaspoons of babas meat curry powder, only put one tablespoon of veggie stock concentrate as I thought two might make it too salty. I also put in a thinly sliced carrot and beans chopped into small pieces at the end for an extra 3mins as I'm finding it difficult at the moment to get my 16 month old to eat any veges. Sauce was thick, creamy and delicious, will definitely have it again!

    Turned out well, I also added in carrots and brocolli chopped up fine with the onion, doubled the curry powder and I had about 600grams of chicken.
    My 3 and 5 year olds ate this, not their favourite but they both got through their meals.
    Yes the chicken shredded but I don’t mind that 😀

    When all was finished I mixed the rice through it as well.
    Yummo. Even my husband enjoyed it. You couldn't even taste the vegetables which was good.

    I used homemade peanut butter, only 1 tablespoon of stock paste and 2 teaspoons of the baba’s curry powder. I also added chopped broccoli and carrots to the steaming tray but then put them into the mixing bowl with 5 mins to go as they weren’t cooking quickly enough – turned out perfect.

    it was for being so simple. Thanks for sharing. I also added a carrot and half a zucchini after the onion and blitzed for the same time and speed and worked well. I added an extra tbs of peanut butter too as we like it peanutty!

    To add a bit more vegie content; after blitzing the garlic I added two carrots, 1 zucchini and 4 mushrooms. I blitzed them on speed 5 for 5 seconds before following the rest of the recipe as normal.
    This will be a regular.

    Loved it! Even the the fussy eater in the family had some! I used 1.5 tbs veg stock paste and only 3tsp of cornflour. There was plenty of yummy sauce so I think next time I would do 600-700g chicken to make the meal go a bit further/have leftovers. Thanks for the recipe!

    Literally takes max 3o minutes from start to finish - tasty and flavoursome, a really good quick quality go to staple ,, saving this one.

    i used 1 tablespoon curry powder due to comments and agree this is suffiient and that the advised 1 teaspoon may be a smidge too less, my 2.5 yr old was not affected by 1 tblsp. i added in half a red capsicum, and served with a side of steamed carrot and zucchini / and steamed rice .. yum. i used chicken breast as thats all i could get and i will use the same cut again - i cut chicken bigger due to comments about shredding ... my chicken peices came out fine and i cut into 3-4cm bits

    Mr 4 didn't like it but everyone else was a fan. I only had aborio rice, so followed the mushroom risotto recipe adding only butter and water to the rice. It looked gluggy initially, but was perfect after 10 minutes in the ThermoServer
