Slow cooked lamb, sweet potato mash and steamed cabbage

  • 4 cloves garlic, peeled
  • 1 sprigs rosemary
  • 1 small piece lamb leg (I used up to 1.2kg), best to use fat end, less bone
  • 2 carrots, peeled, ends removed, cut into four
  • 1 zucchini, ends removed, cut into four pieces
  • 1 onion, peeled, quartered
  • 1 heaped tablespoons beef stock paste, (or other stock paste)
  • 2 litres water, approx
  • 2 sweet potato, peeled, cut up to fill simmering basket
  • 1/4 whole green cabbage, shredded into noodles
  • 40 g Butter
  • cream, to taste
  • Salt and pepper, to taste

Recipe's preparation

    Slow cooked lamb
  1. - place garlic and rosemary in bottom of thermomix bowl
    - insert blade cover
    - place vegetable pieces and stock paste into bowl on top of blade cover
    - sit piece of lamb on top of vegetables, and fill with water to the max fill line (approximately 1L - do not overfill past this line)
    - insert measuring cup, and place lid on thermomix
    - choose slow cooker function, and choose desired cooking duriation (I choose eight hours if time allows, and find that six hours is the minimum time needed)
    - once lamb has finished cooking, remove bones and place meat aside (in a thermoserver if you have one available)
    - strain remaining juices out of bowl using your simmering basket, and reserve liquid beef stock if desired (can be frozen to use for soup)
    - I suggest retaining the cooked carrot pieces to add to your sweet potato mash, but all other veg is discarded
  2. Shredding lamb and steaming vegetables
  3. - once bowl has been emptied, remove bones from lamb and place pieces back in Thermomix bowl to shred
    - using speed four (4), Counter-clockwise operationreverseCounter-clockwise operation shred meat for 3-4 seconds, stop as soon as sound had changed
    - place meat into thermoserver or other thermal bowl
    - rinse bowl (no need to wash) and add 1L water back into bowl
    - insert simmering basket filled with sweet potato pieces
    - place lid on thermomix and add varoma with cabbage noodles, and varoma lid
    - steam on varoma temp for 20 minutes, speed three (3)
    - once completed, set noodles aside in another thermoserver
    - to mash sweet potato, use spatula to remove simmering basket and then discard water
    - place sweet potato and reserved carrot in bowl with butter and salt and pepper, and cream or milk to taste, depending on what texture mash you'd prefer
    - mash using speed four (4) until desired consitency is achieved

    Serve lamb, mash and cabbage noodles with gravy, or sauce of choice.

    The development of this receipe was based on the idea of a slow cooked lamb with loaded mash, from youfoodz - they serve with a mushroom and tomato based sauce, but I have opted to omit this to make it lower carb, however there are many options which can be made/added to your preference.
