Sweet & Sour Pork by Olivia Tan

  • 500 grams Special Young Pork Ribs, cut 4-5 cm
  • 30 grams yellow capsicum, cut triangle shape
  • 30 grams red capsicum, cut triangle shape
  • 1 piece onion, thin and long slices
  • 20 grams plum sauce, (Lee Kum Kee)
  • 70 grams tomato sauce, (ABC)
  • 10 grams chili sauce, (ABC)
  • 10 grams rice wine / Japanese Cooking Sake, (rice wine: Narcissus; Sake: Hinode Ryorishu)
  • 100 grams water
  • 20 grams lump sugar

Recipe's preparation

  1. 30 minutes or 1 hour before cooking, thinly coat 500 grams special young pork ribs with baking soda lightly, then rinse with running water. Then insert the meat into the mixing bowl, fill it up with water until the meat is fully drawn. Then blanch 15 min / 50 C / reverse / speed spoon
  2. Add 20 grams Plum sauce, 70 grams Tomato ketchup, 10 grams Chili ketchup,10 grams rice wine / Cooking Sake, 100 grams water. Blend 10sec/sp.2.5
  3. Add 20 grams lump sugar, 500gr special young pork ribs, cook 26 min / 120 C / reverse / speed spoon
  4. Add 1 piece Onion, 30 grams yellow capsicum, 30 grams red capsicum, cook 3 min 30 sec / 120 C / reverse / speed spoon

Tip

30 minutes to 1 hour before cooking, thinly coat the meat with baking soda. Then rinse and blanch them.
