Thai Beef Massaman

Curry

  • 150 g peanut, (optional)
  • 1 --- brown onion, halved
  • 30 g peanut oil
  • 60 g massaman curry paste
  • 400 g coconut milk
  • 400 g coconut cream
  • 700 g beef tenderloin fillet, cut into 2cm cubes
  • 1 tablespoon MT meat stock concentrated
  • 1 tablespoon cornflour
  • 2 tablespoons brown sugar
  • 1 tablespoon fish sauce
  • 3 potatoes, cut into cubes
  • 1 cinnamon sticks
  • 2 bay leaves
  • 5 cardamon pods, lightly crushed
  • 1 tablespoon Tamarind Concentrated, See Note

Recipe's preparation

    Curry
  1. 1- Place Peanut (Optional) and Onion into TM Bowl and chop 3 sec/ speed 7. Scrape down side of bowl.

     

    2- Add oil and massaman curry paste and saute 3min/ Varoma / speed 1.

     

    3- Add beef, and 5 tbsp of coconut milk and cook 10min / 100C / Counter-clockwise operation / speed 1 with MC removed and TM basket on mixing bowl lid.

     

    4- Remove basket and add cornflour, stock, coconut milk, coconut cream, sugar, fish sauce and tamarind.

     

    5- Place TM basket on mixing bowl and add the potatoes, cinnamon, bay leaves and cardamon pods, and cook 20min/ 100 C/ Counter-clockwise operation/ Speed1 with MC removed.

     

    6- Allow to rest 5 min before serving. Serve hot with jasmine rice.

Tip

Tamarind concentrated - If you don't have you can substitute with lime juice from one lime.

    Absolutely love this recipe.  First curry I've made and hubby and I both have a new favourite.  I cooked the potatoes separately and the coconut rice was a winner too.  Thanks for the recipe!

    Very yummy, and an authentic massaman taste. I used just the 400ml of coconut cream and it was plenty. Place the basket in the bowl and the potatoes will cook fine, but it's definitely a snug fit - don't be tempted to add any extra meat as my TM5 bowl was chockers with the above quantities. It's become a regular at our house

    If you only add 400 liquid at the end instead of 800 it *just* fits in the tm31.

    Thanks for the recipe it provided me the basis to create a slightly different version. Like the other comments I added a bit less coconut milk - 200 ml and a bit more of the massaman curry paste 75 g.

    This was a great meal had by all my family. Used chicken thighs instead and 400g coconut cream and about 200g of coconut milk. Did peanuts - delish and the right flavour - I think I used about 95g of the massman paste and lime juice instead of tamarind. Cooked potato's separate after reading other comments. Made coconut rice to go with and boy was it yummy - I'd say almost restaurant quality taste.

    I liked the recipe but found there were a few problems. 800g of coconut milk and cream combined is soooo much. At the point of adding, the mixing bowl was already nearly full so I only added 400g with the intention of adding more later if there was room. There wasn't but I found 400g plenty anyway. There seems to be more ingredients than the TM31 can fit.

    Step 4 and 5 are really confusing - you are adding things in both but there are no cooking instructions for step 4 so why separate? How can you add the ingredients of step 5 if the basket is in the way!!

    I found that the potatoes required more cooking and for my taste would do more masa an paste and less (half) sugar.

    Making these changes I would make it again but please clarify the method.
