Thai Chicken with Cashews

  • 500 g chicken breast, sliced
  • 1 brown onion, sliced
  • 3 cloves garlic, peeled
  • 30 g peanut oil
  • 3 tablespoons Sweet chilli sauce
  • 60 g oyster sauce
  • 30 g soy sauce
  • 20 g palm sugar
  • 1 lime, juiced
  • 1 red capsicum, sliced
  • 100 g broccoli, cut into pieces
  • 1 carrot, peeled and sliced
  • 1 can Sliced water chestnuts, drained
  • 100 g Roasted Cashew Nuts
  • 350 g Jasmine rice
  • 1000 g water
  • pinch salt
  • 20 g oil, extra

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Weigh water into TM bowl, add salt and extra oil.  Insert steamer basket and weigh rice.  Place lid on TM bowl.

  2. Place carrot, red capsicum and broccoli into Varoma, and attach to TM bowl lid.

  3. Cook 18 min/Varoma/sp4.

  4. Remove Varoma and set aside.  Empty rice into Thermoserver to keep warm.  Empty water from TM bowl and rinse.

  5. Place garlic into TM bowl and chop 3 sec/Speed 7, scrape down sides.

  6. Add peanut oil and saute 2 mins/100 deg/Speed 2

  7. Add chicken and cook 3 min/120 deg/Counter-clockwise operationGentle stir setting

  8. Add sweet chilli sauce and cook 4 min/120 deg/Counter-clockwise operation Gentle stir setting

  9. Add oyster sauce, soy sauce, palm sugar, water chestnuts and onion cook 6 min/120 deg/Counter-clockwise operationGentle stir setting

  10. Add lime juice, cashews, carrot, red capsicum and broccoli to TM bowl.  Heat 1 min/120 deg/Counter-clockwise operationGentle stir setting

  11. Serve
  12. Serve with jasmine rice.

Tip

*Add sliced fresh chilli when serving for extra heat.

*I like to rinse the uncooked rice before cooking.

    Chicken and cashew nuts - very nice, thank you for sharing this recipe, my husband said, "it's just like the stuff they service in the Thai down the road" And it was, very easy to make and taste great. I also added the chilli, left out the sugar and the water chestnuts. I added mushrooms instead. Will defo be served again at our house tmrc_emoticons.)

    Made this today, added ginger with the garlic, also added sliced onions at same time of cooking of ginger & garlic. Didn't use water chestnuts as we don't like them. I decided to go shop to get cashews & definitely think cashews compliment this dish.

    really nice dinner - takes a bit of prep time, but it is worth it. i am feeding 5 but we had way too much rice left over so will reduce it to about 250g next time & see how that goes.

    Great recipe! Very tasty, and satisfied my Thai takeaway cravings. However takes a bit of effort to make, as in, you have to be in the kitchen the whole time, adding things every few minutes. I think it will be a favourite of mine though!

    This was really nice. I used the rice cooker separately for the rice and steamed the veggies in the last 6 mins of cooking the chicken. Used thigh meat instead of breast. Didn't need to thicken the sauce I thought it was perfect the way it was. Will do again.

    I made this tonight - taking on board the comments to reduce the vegie steaming time. I don't like water chestnuts so just left them out.  It has nice flavours and a good amount of sauce to soak in to the rice. I like a bit more bite so would add some chilli next time.

    I tried this for dinner last night. Was a great recipe. Didn't read the comments below until after cooking the dish. Will reduce the cooking time for veggies and will use butterfly throughout the whole process as my chicken was completely shredded. Also will avoid sugar as it was bit too sweet for my liking. Otherwise great recipe!

    Excellent Thai chicken with cashews. As per comments, reduced the steaming time for the vegetables to 13 minutes. Didn't add palm sugar. Doubled quantity of vege; tight fit but worthwhile. Will make again.

    Great recipe.  Mr 9 enjoyed it. Used peas and sweet corn kernals for a bit of colour instead of water chestnuts (for kids).   It will become part of the reference menu.   Used brown sugar instead of palm sugar.

    This was very enjoyable, thank you. Aside from sautéing the onion at the start with the garlic, I followed the recipe to the letter. The veggies were a touch too soft for my liking so I'll steam them for less next time. The sauce was thin which I thought would be a problem but it was really lovely over rice. I also used the butterfly throughout to stop the chicken from shredding. I'll be making this again. And I have leftovers for tomorrow!!
