Thai Chicken with Cashews

Ingredients

4 portion(s)

Thai Chicken with Cashews

  • 500 g chicken breast, sliced
  • 1 brown onion, sliced
  • 3 cloves garlic, peeled
  • 30 g peanut oil
  • 3 tablespoons Sweet chilli sauce
  • 60 g oyster sauce
  • 30 g soy sauce
  • 20 g palm sugar
  • 1 lime, juiced
  • 1 red capsicum, sliced
  • 100 g broccoli, cut into pieces
  • 1 carrot, peeled and sliced
  • 1 can Sliced water chestnuts, drained
  • 100 g Roasted Cashew Nuts
  • 350 g Jasmine rice
  • 1000 g water
  • pinch salt
  • 20 g oil, extra

Recipe's preparation

  1. Weigh water into TM bowl, add salt and extra oil.  Insert steamer basket and weigh rice.  Place lid on TM bowl.

  2. Place carrot, red capsicum and broccoli into Varoma, and attach to TM bowl lid.

  3. Cook 18 min/Varoma/sp4.

  4. Remove Varoma and set aside.  Empty rice into Thermoserver to keep warm.  Empty water from TM bowl and rinse.

  5. Place garlic into TM bowl and chop 3 sec/Speed 7, scrape down sides.

  6. Add peanut oil and saute 2 mins/100 deg/Speed 2

  7. Add chicken and cook 3 min/120 deg/Counter-clockwise operationGentle stir setting

  8. Add sweet chilli sauce and cook 4 min/120 deg/Counter-clockwise operationGentle stir setting

  9. Add oyster sauce, soy sauce, palm sugar, water chestnuts and onion cook 6 min/120 deg/Counter-clockwise operationGentle stir setting

  10. Add lime juice, cashews, carrot, red capsicum and broccoli to TM bowl.  Heat 1 min/120 deg/Counter-clockwise operationGentle stir setting

  11. Serve
  12. Serve with jasmine rice.

Tip

*Add sliced fresh chilli when serving for extra heat.

*I like to rinse the uncooked rice before cooking.

    Unfortunately found this to be quite bland. Followed the recipe as described but added drained bamboo shoots instead of water chestnuts. Reduced the quantity of rice.

    Needed to add salt & chilli to give it the flavour it lacked & even then I would say it was average at best.

    Great flavour and very easy. Was light and tasty, only issue was even on reverse some of the chicken was mushed up. Everyone loved it - and had seconds. I added some button mushrooms towards end too - Brilliant!

    i didn’t have oyster sauce so I used hoisin. Flavour was still good but the sauce was dark. Next time I’ll pan fry the chicken or porch it in the Veroma as it end up too shredded.

    Chicken and cashew nuts - very nice, thank you for sharing this recipe, my husband said, "it's just like the stuff they service in the Thai down the road" And it was, very easy to make and taste great. I also added the chilli, left out the sugar and the water chestnuts. I added mushrooms instead. Will defo be served again at our house tmrc_emoticons.)

    Made this today, added ginger with the garlic, also added sliced onions at same time of cooking of ginger & garlic. Didn't use water chestnuts as we don't like them. I decided to go shop to get cashews & definitely think cashews compliment this dish.

    Great recipe! Very tasty, and satisfied my Thai takeaway cravings. However takes a bit of effort to make, as in, you have to be in the kitchen the whole time, adding things every few minutes. I think it will be a favourite of mine though!

    This was really nice. I used the rice cooker separately for the rice and steamed the veggies in the last 6 mins of cooking the chicken. Used thigh meat instead of breast. Didn't need to thicken the sauce I thought it was perfect the way it was. Will do again.
