Thai Chicken with Cashews
- 650 grams chicken breast, Cubed or Diced
- 1 brown onion, sliced
- 3 cloves garlic, peeled
- 30 grams peanut oil
- 3 tablespoons Sweet chilli sauce
- 60 grams oyster sauce
- 30 grams light soy sauce
- 25 grams palm sugar
- 1 lime, juiced
- 1 red capsicum, sliced
- 20l grams broccoli, cut into sml florets
- 2 carrots, peeled and sliced
- 1 can Sliced water chestnuts, drained
- 150 grams Roasted Cashew Nuts
- 400 grams Jasmine rice
- 1200 grams water
- pinch salt
- 20 grams oil, extra

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Weigh water into TM bowl, add salt and extra oil. Insert steamer basket and weigh rice. Place lid on TM bowl.
- Place carrots, red capsicum and broccoli into Varoma, and attach to TM bowl lid.
- Cook 15 min/Varoma/sp4.
- Remove Varoma and set aside. Empty rice into Thermoserver to keep warm. Empty water from TM bowl and rinse.
- Place garlic and onion into TM bowl and chop 5 sec/Speed 7, scrape down sides.
- Add peanut oil and saute 2 mins/100 deg/Speed 2
- Add chicken and cook 3 min/120 deg/"Counter-clockwise operation" "Gentle stir setting"
- Add sweet chilli sauce and cook 4 min/120 deg/"Counter-clockwise operation" "Gentle stir setting"
- Add oyster sauce, light soy sauce, palm sugar, water chestnuts and onion cook 6 min/120 deg/"Counter-clockwise operation" "Gentle stir setting"
- Add lime juice, cashews, carrots, red capsicum and broccoli to TM bowl. Heat 1 min/120 deg/"Counter-clockwise operation" "Gentle stir setting"
- Serve with jasmine rice.
