Shanks
- 4 Large Lamb Shanks, Or 6 smaller shanks
- 4 sprig rosemary
- salt and pepper to taste

- 3 stalk Celery, Cut into chunks
- 4 carrots, Cut into chunks
- 1 onion, Halved
- 4 clove garlic
- 30 gram olive oil
- 1 tablespoon TM Vegetable stock paste
- 1000 gram water
- 8 tomatoes, Quartered
- 100 gram red wine
- 1 tablespoon brown or rapadura sugar
- Ground pepper, to taste
- 50 g cornflour

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Arrange shanks into Varoma dish, you will not need the tray.
Place Rosemary over the top of shanks, season with salt and pepper and put Varoma lid on and set aside.
Place celery, carrot, onion and garlic into bowl and chop 5 sec/speed 7.
Scrape sides down, add oil and saute 5 minutes/Varoma/speed 2
Add stock paste, water, tomatoes, red wine, sugar and pepper to bowl. Place lid on, then Varoma into position. Cook 90 minutes/Varoma/speed 2
Turn lamb shanks over to ensure even cooking. For 6 small shanks, cook for 30 mins/Varoma/Speed 2 OR for 4 larger shanks 60 minutes/Varoma/speed 2
Once desired cooking time is up, remove Varoma and place over a Thermoserver to keep warm or place onto plates to begin cooling down a little. Place cornflour in bowl and cook a further 5 minutes/90 degrees/speed 4.
Serve shanks with mashed potatoes (you can do this prior to shanks then keep hot in a Thermoserver whilst cooking shanks), steamed veges (you may be able to fit these in whilst cooking shanks) and drizzle with sauce.

You can drizzle some sauce over the shanks throughout the cooking process if you like.
The left over sauce could easily be eaten as a soup, either as is or with some left over meat shredded into it. To shread ANY steamed meat, chop into chunks and shred 3-5 seconds/"Counter-clockwise operation" /speed 4

With the cooler weather arriving this was the perfect meal for a wintry night. However, don't start making at 4pm like I did if you want an earlier meal - however, it was well worth the wait! I didn't have any celery so subbed with a zucchini, subbed the fresh tomatoes with a tin of diced tomatoes and some left over tomato puree. I think I used about 700gm water and 200 gm red wine and it was to the MAX level. Once the first 90 mins of cooking was over I used the varoma lid as a trivet to place the varoma on (catches all the juices) - turned over the lamb shanks and spooned some of the sauce from the bowl over the shanks. I cooked them for another 40 mins but I think another 20 mins or so would have been better - so all in all 3 hours hours cooking time is probably better. I didn't add cornflour but blended the sauce for 1 min Sp 9 and great consistency. We are having left overs for tea tonight. Quite a lot of sauce left over which I have frozen to use as a Beef Stroganoff base for another quick meal this week. Thank you Chenoa for such a delicious and easy recipe!

I made this tonight and it is yummy. I used four largeish shanks and the cooking time was good. I have a tm5 and the level was pushed to the max with only 6 tomatoes and they weren't overally large ones. Placed 7 tomatoes in but had to pull 4 quarters out to take the level of max and I had only placed three carrots in also. Perhaps approx weights for the carrots and tomatoes could assist others. I was left with a very thick sauce and certainly didn't need cornflour as I spooned it on and it stayed piled up. I usually make lamb shanks in my slow cooker or the pressure cooker but would happily make it in the thermie with less tomaotes and one less carrot.

Made this tonight. It was delicous. I have a TM31 so i only used 6 tomatoes and 800gram water. I left a little liquid out and added after the hour of cooking. I didnt end up needing the cornflour as my sauce was perfect consitancy.

Lovely lamb shanks! The meat falls off the bone, very moist. By the time I got all the ingrediants in for the sauce, I could only fit 7 tomatoes and 300g water. The sauce was very thick. Like a puree. But very tasty! Next time I'll try adding the rest of the water during the last 30 mins of cooking, when the shanks are turned. I didn't need the cornflour!
I made this again, this time I halved the sauce, though used the 1.5 times the amount of water. Keep an eye on the water level. The sauce is so tasty. Don't try and fit 6 large shanks over 2 trays, they won't cook. Use only as the recipe suggests on 1 tray 😅
I used to hate cooking shanks
I used to hate cooking shanks but after finding this recipe I'm digging through the freezer to find more!!! These were amazing!! I had two large shanks with ribs so I put the ribs on the varoma top tray and shanks in the varoma dish. My sauce was pretty thick but I liked it like that. I didn't add sugar as I don't cook with sugar and it tasted great.
It made ALOT, so we got two meals each, then I cooked plain chicken and used this sauce again and still had heaps left over!
I watered down the rest of the sauce and had for soup. I love that I got so much out of so little effort!!
Also another bonus was cooking in the varoma it didn't seem to be as fatty. And that's one thing I hate about cooking lamb.

Loved this meal whole family enjoyed it, I had my 15 year old daughter make it as I was out so shows how simple it was. The only comment I would have was there was a large amount of sauce left which would have been great to use for something else but my daughter threw it out.

Yum! This was my very first go at lamb shanks in the Varoma and it was sooooo good! The lamb was tender and fell off the bone. The sauce was really flavoursome too. I added about 300g of cubed potato and sweet potato to thicken in the last 15 mins (instead of cornflour) then for the very last 10 mins steamed some greens in the Varoma while the lamb was resting in the thermoserver. Will definately make again

Absolutely brilliant meal!
Absolutely brilliant meal! Hubby was dubious but loved it! We cooked the lamb shanks a little more than recommended to ensure their tenderness. Also we found that the sauce ingredients went above the max. indicator in the bowl so reduced the water and number of tomatoes to accommodate. Sauce tasted amazing, had an abundance leftover and used as soup. The lamb juices dripping into the sauce mix also adds to the flavour.
