Warm Thai Chicken and Noodle Salad - Paleo, Gluten Free

Ingredients

4 portion(s)

Salad

  • 1 cm ginger
  • 1 clove garlic
  • 1/2 tbsp coconut oil
  • 500 g chicken mince, (or you can mince your own chicken)
  • 1 package sweet potato noodles, (100g)
  • 1 tbsp fish sauce
  • 1 tbsp stock paste/edc
  • 250 g water
  • 2 --- Limes, juice of
  • 1/2 red capsicum, finely sliced
  • 1/2 red onion, finely sliced
  • 4 portions baby spinach
  • corriander, (fresh, finely sliced, optional)
  • Cashews, (crushed, optional)
  • lime, (optional)
  • chilli flakes, (optional)

Recipe's preparation

    Salad
  1. 1. Chop ginger and garlic 4 sec sp 6. Add coconut oil cook for 2 min varoma sp 1

    2. Add chicken mince and cook 5 min varoma Counter-clockwise operation sp 1.

    3. Add sugar, fish sauce, lime juice, chilli, stock paste, water and sweet potato noodles and cook for 15 min varoma Counter-clockwise operation sp 1

    4. Divide spinach, capsicum and onion among 4 bowls. Cover with cooked chicken and noodles and toss. Serve with fresh coriander, chopped cashews, chilli flakes and lime wedges

    The amount of sugar to add in step 3 wasn't given, so I added 1 tsp of brown sugar which worked well. Couldn't find sweet potato noodles so I substituted egg noodles.

    Very nice thanks. No idea where to get sweet potato  noodles from do just did rice noodles and also Chinese cabbage . Lovely and will make again!
