Zanzibar Coconut Chicken Curry

  • 1 tablespoons coconut oil
  • 700 grams skinless chicken thigh fillets, Cut into 3cm pieces
  • 1 onions, Peeled and cut in half
  • 2 garlic cloves
  • 2 Fresh Green Chillies
  • 1/2 teaspoons ground turmeric, or 1 tsp fresh turmeric
  • 1/2 teaspoons cumin seeds
  • 1/2 teaspoons coriander seeds
  • 4 cardamom pods, split and seeds removed
  • 1 lime, juice only
  • 2 tablespoons chicken stock paste, The Basic Cookbook recipe
  • 75 grams water
  • 150 grams coconut cream
  • 1 tablespoons almond meal
  • 120 grams fresh green beans, trimmed and cut in half
  • 3 level tbsp fresh basil, chopped roughly
  • 2 fresh tomatoes, chopped

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add, cumin, coriander and cardamom seeds to mixing bowl. Dry roast without mc in place, 1 min/100c/speed 2. Leave to cool for 5 minutes then mill 4mins/speed 9. Remove spices from mixing bowl and set aside.
  2. Add onion, garlic, one chilli into mixing bowl, chop 5 sec/speed 5, scrap down sides of bowl. Add coconut oil and quartered tomatoes. Cook 3 mins/100c/speed1.
  3. Add reserved milled spices and turmeric, chicken stock paste, water, coconut cream and lime juice. Cook 5 mins/100c/speed 1
  4. Add diced chicken and almond meal. Cook 5 mins/100c/speed 1/reverse. Add green beans. Cook 2 mins/100c/speed 1/reverse. Season with salt and pepper to taste.
  5. Place in a ThermoServer and top with finely chopped basil and finely chopped green chilli. Serve with steamed basmati rice.

    Had this again last night. Really hot day today and the subtlety and lightness of the flavour was commented on by my dinner guests. Well received and perfect for an outside dinner party under the stars with a crisp white wine. Served with toasted tortillas (rather than naan breads), and 3 side accompaniments: freshly sliced cucumber, green melon (honeydew), mango chutney.

    Lovely flavours. Cooked the chicken just a little longer and added a bit more coconut cream. didn't have beans on hand so used snow peas instead and added in the last 60 secs. Served with sambals of banana in dessicated coconut, diced cucumber in yoghurt, japati bread. Delicious!
