almost raw Vegan Tacos

Ingredients

2 portion(s)

Walnut Taco mix

  • 100 grams walnuts or walnut pieces
  • 1 tablespoon soy sauce
  • 1/8 teaspoon Cayenne pepper or to taste
  • 1 teaspoon cumin seeds or ground
  • 1 teaspoon extra virgin olive oil

Cashew Sour Cream

  • 70 grams Raw Cashew Nuts
  • 1/2 Lemon Juiced
  • 1 teaspoon apple cider vinegar
  • 5 tablespoons water

Salsa

  • 1/2 red onion, peeled
  • 1 garlic clove
  • 1/2 lime juiced
  • 1 teaspoon Maple syrup
  • 1 tablespoon extra virgin olive oil
  • 1 pinch salt
  • 2 Roma tomatoes, chopped, or 1 cup of cherry/grape tomatoes, halved
  • 1 lebanese cucumber, chopped
  • coriander minced, to taste
  • corn kernels, (optional)

Other elements

  • 1 avocado
  • red cabbage leaves, you may also use lettuce leaves or kale or similar

Recipe's preparation

    Walnut taco mix
  1. put all ingredients into TM bowl, pulse turbo button 3-4 times 

  2. Cashew Sour Cream
  3. put all ingredients into TM bowl, blitz on speed 10 for 20 seconds, check consistency. if too thick add another tablespoon of water and blitz on speed 10 for a few more seconds until desired consistency is reached

  4. Salsa
  5. put garlic and onion in TM bowl, chop on speed 8 for 5 seconds, place into mixing bowl

  6. whisk in the EVOO, maple syrup, lime juice and salt

  7. add the other ingredients and stir to coat

  8. let sit for at least 10 minutes to allow flavours to combine

  9. to serve
  10. use the cabbage (or other green) leaf as the taco shell, fill with the walnut 'meat', salsa and cashew sour cream, top with sliced avocado and enjoy!

Tip

feel free to add you favourite veges to the salsa mix and to adjust the seasonings in the walnut mix to taste.

to make it completely raw use un-pasturised soy sauce in the walnut mix and use either raw honey or raw agave nectar as a sweetener in the salsa

this recipie can also be easily doubled or tripled to feed more people.

    One of the simplest and best recipes I have tried. I especially like the Walnut mix and Cashew mix, although as posted the cashew mix was too liquid and I doubled the quantity to obtain a 'sour cream' texture.
