  • Israeli Couscous, 2 cups
  • fresh Corn cobs, 2
  • carrot, 1
  • toasted almonds, 1/2 cup
  • 4 sprigs coriander, leaves only

  • 3 tablespoons cooking oil, neutral flavour (rice bran)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Mill toasted almonds on speed 4 for 10 secs, set aside



    2. Wash carrot and chop on speed 5 for 5 secs, add coriander and chop for another 5 secs, set aside



    3. Without washing out jug add couscous into Thermomix, add 3 cups of water, add ½ dessertspoon vegetable stock.



    4. Place Varoma in position, add 2 corn cobs onto steaming tray, add lid.



    5. Choose Varoma setting for 15 minutes on speed 1



    6. Check for done-ness. Corn should be brightly coloured and tender, couscous should have absorbed all the water.



    7. In necessary drain couscous. (Reserve any liquid for stock, soup or whatever).



    8. When cool enough to handle cut the kernels off the cobs and put into salad bowl with all the rest of the ingredients.





    9. Toss well and serve.

Tip

Keeps well in refrigerator. Good served with seafood, BBQ meats, roast chicken or with a platter of cheese and crusty bread.

    I'm not sure how to rate this. I used the wrong couscous - do NOT use the small tiny stuff!!
    DEFINITELY could have been avoided, by including a picture.

    I ended up adding a whole lot of stuff, including mushrooms, capsicum, sundried tomatoes etc. for dinner to have with our meat. Couscous was ok.

    Then I added cherry tomatoes, spinach and herbs to re-heat for lunch. Lunch was yum!

    I might try again with the right couscous at some other point in time.
