Carrot/Pumpkin Spinach Slice

  • 1 bunch spinach silverbeet or 500g frozen
  • 20 g Parmesan cheese, cubed
  • 50 g Tasty cheese, cubed
  • 300 g carrots and pumpkin, cubed
  • 1 red onion, quartered
  • 5 eggs
  • 1 tablespoon TM vegetable stock concentrate
  • 2 clove garlic
  • 100 g SR flour
  • black pepper, to taste

Recipe's preparation

    Carrot/Pumpkin Spinach Slice
  1. Pre heat oven to 180º fan forced

     

    If using fresh spinach/silverbeet, shred leaves and stems finely and cook in a little water until wilted.  Thaw if using the frozen variety and squeeze all the liquid from whichever type you are using.   Set aside.

     

    Place the extra tasty cheese (for topping) in the TM bowl and grate for 4 secs/speed 5. Set aside.

     

    Place the parmesan, tasty cheese and garlic cloves in the TM bowl and grate for 7 sec/speed 5.   Set aside.

     

    Place the carrots and onion into the TM bowl and grate for 7 sec/speed 5.   Set aside.

     

    Without cleaning the bowl, add the eggs and mix for 10 sec/speed 8.

     

    Add concentrated stock, garlic and cheeses and pepper back into the bowl and combine for 10 sec/speed 6.

     

    Add the carrot, onion, spinach and combine for 30 secs/speed 4/reverse.

     

    Add the flour and combine for 30 sec/speed 3/reverse.

     

    Spray a 12 cm quiche dish then pour the mixture into it.  Sprinkle with extra tasty cheese on top and bake 45 minutes.  Allow to stand 5 mins before serving.

     

    Variations:   finely slice mushrooms or tomatoes and place on top of slice before the cheese.

    I love this recipe, didn't use pumpkin this time - just carrot, used white onion instead of red and no garlic - it still tasted great - good, adaptable recipe.  Good way to get toddlers to eat silverbeet tmrc_emoticons.;)

    wow this is awesome. I didnt have enough pumpkin so i addded zucchini in. The flavour is tasty. I used all 50g tasty in the recipe then added some to the top. Wonderful recipe will become a favourite Big Smile
