Curried Tofu Scramble

Ingredients

Tofu Scramble

  • 2 cloves garlic
  • 30 grams olive oil
  • 1.5 teaspoons curry powder
  • 250 grams organic firm tofu
  • 90 grams frozen peas
  • 40 grams Tamari or Gluten Free Soy Sauce
  • 2 handfuls baby spinach

Recipe's preparation

    Tofu Scramble
  1. Place garlic in TM bowl and chop for 3 sec/speed 7

  2. Add olive oil and curry powder and saute for 5 mins/Varoma/speed 1

  3. Cut tofu into quarters or large chunks and add to TM bowl. Roughly chop for 8 sec/Reverse/speed 4

  4. Add frozen peas and tamari and cook for 8 mins/100'C/Reverse/speed 1

  5. When cooked, toss in a large bowl with baby spinach. Serve with a side of steamed vegetables

Tip

My favourite way to enjoy this dish is served with a side of steamed vegetables topped with some homemade salad sprinkles for added nutrients, and some raw kim chi or sauerkraut (I like Peace Love & Vegetables Byron Bay Kim Chi).

 

It is also fabulous as a breakfast dish served on gluten free toast.

    We loved this dish, thank you for sharing it. The only adaptation we would make is to reduce the amount of soy sauce as it was a little too salty but apart from that, delicious! x
