Orange Potato Fritters

Orange Potato Fritters

  • 500 grams orange sweet potato - raw, Cut in chunks
  • 200 grams shaved leg ham, chopped
  • 5 green onions, Spring, rough chop
  • 1/2 cup fresh flat-leaf parsley leaves
  • 1 tablespoon Dijon mustard
  • 75 grams plain flour
  • 1 large egg
  • 1 tablespoon olive oil

Recipe's preparation

    Patties
  1. Preheat oven to 170C/150C fan-forced. Place a wire rack over a baking tray lined with baking paper.

  2. Place potato, ham, onion, parsley, in TM bowl. Speed 4  for 3-4 seconds to cut up. Season with salt and pepper.
    Add
    egg, mustard and flour to TM bowl to combine Speed 4 Counter-clockwise operation for 3 seconds.

  3. Heat half the oil in a large non-stick frying pan over medium-high heat. Place 1/4 cup mixture into pan, flatten slightly Cook for 3 to 4 minutes each side or until cooked through.
     

  4. Transfer fritters to prepared tray. Place in oven to keep warm. Repeat to make a total of 12 fritters.

Tip

Omit Ham and substitute mushrooms (weight for weight) for a vegetarian version.

    Yum! I added carrott and leek as i didnt have enough sweet potato abd no spring onion. I also left out the ham. I'll be making these again tmrc_emoticons.)

    Yes it is powerful!! Wow what a great appliance.  I love mine. 

    It should be a course mix, but it still should have worked just add extra seasoning and flour to bind.  They are just a pattie, I am glad you enjoyed the flavour.

    I didn't have much luck with this one - but I've only been using my Thermomix for a few days...

    After I did speed 4 for 7 seconds I thought it wasn't chopped up enough so gave it another go and ended up with a 6 month old babyfood consistency.

    Flavours were great tho... I substituted ham for salmon, coated the patties with flour, egg and breadcrumbs and served with salad.

    I just need to remember how powerful this machine is!!!

    I had made changes to the recipe but they must have vanished with the other recipes I saved.

    Sounds good, but do you cook and mash sweet potato beforehand or just chop it up finely before adding other ingredients?

    Quick and easy, serve with salad, you can make it Gluten free by substituting Tapioca flour for the flour.
