Quinoa salad

  • 400 grams Quinoa (washed)
  • 1 tablespoon TM Veg Stock Concentrate
  • 900 grams water
  • 3 cloves garlic
  • 1/2 red onion
  • fresh parsley, Good handful
  • fresh coriander, Good handful
  • 1 Punnet of cherry tomatoes
  • 1 small red capsicum
  • juice of 1/2 lemon
  • 1 tbsp orange juice
  • 1 tbsp Tamari soy sauce
  • Juice of 1 lime
  • 20 grams extra virgin olive oil
  • fresh chilli to taste
  • 1 cm fresh ginger

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Quinoa salad
  1. Thoroughly rinse quinoa or soak for 30 minutes if time permits.

    Add water and stock to the TM bowl. Pour quinoa into simmer basket and place into bowl. 

    Cook on varoma temp, 18 minutes, speed 3. 

    Once cooked, tip remaining water out of the bowl and allow quinoa to cool down. Add quinoa to Thermoserver and put in the fridge to cool. 

     

  2. Place garlic, onion, parsley, coriander, ginger and chilli into bowl and chop for 3 seconds on speed 7.

    You may need to scrape down sides of bowl and repeat. 

    Put into the Thermoserver with the quinoa. 

     

  3. Do not rinse the bowl. To make the dressing, add olive oil, lime juice, lemon juice, orange juice and tamari soy sauce to the TM bowl.

    Mix on speed 6 for 10 seconds. 

     

  4. Chop cherry tomatoes in half and dice the capsicum and put on top of quinoa salad.

     

  5. Mix the dressing through only when you are ready to serve.

Tip

Quinoa can be made ahead.

You could use rice or couscous instead of quinoa.

You could add/serve with shredded chicken or grilled salmon.

Chilli can be omitted if not to your liking!

    400g quinoa would serve around 10-12 people as a side salad. I started to rinse the quinoa in the basket butsome fell out as the grains are too fine, so swapped it over to a strainer before reinserting into the basket (TM5). The number of ingredients in the dressing could be reduced; just using lemon juice was fine. Otherwise it is a very tasty salad, particularly if you have bountiful homegrown parsley or tomatoes.

    400g quinoa?!? It filled the basket and was way too much! With that it all became Bland as the ratios were out. Liked the flavour of the dressing and all components but half the quinoa and it will be better.

    Quite good. Works well as a side dish. Would also be good with BBQ meat. I left out the onion as it can be quite strong when it’s raw.

    This salad is delicious, quick and easy! The dressing is a nice summery taste. I added slices of orange, cucumber, crumbed fetta and wedges of boiled egg on top for extra protein. Thanks for this yummy recipe  tmrc_emoticons.)
