Raw Buckwheat Pizza

Buckwheat Crust

  • 500 grams buckwheat, soaked overnight
  • 200 grams Sunflower & Pepita Seeds
  • 150 grams sundried tomatoes, soaked overnight
  • 180 grams Tomato Soak Water
  • 3 cloves garlic
  • 150 grams Spring onions chopped
  • 100 grams chia seeds
  • 1 level teaspoon salt
  • 2 teaspoons Maple syrup
  • 1/2 bunch fresh basil
  • 2 sprigs fresh oregano, leaves only

Raw Basil Pesto

  • 3 bunches fresh basil
  • 3 cloves garlic
  • 250 grams pine nuts
  • 3 heaped tablespoons lemon juice
  • 1 level teaspoon sea salt

Raw Tomato Sauce

  • 200 grams Semi Dried Tomatoes
  • 1 fresh tomato
  • 1 bunch fresh basil
  • 1 Medjool date
  • 2 level tablespoons olive oil

Raw Cashew Cheese

  • 250 grams raw cashews
  • 125 grams filtered water
  • 2 level tablespoons lemon juice
  • 1 level tablespoon nutritional yeast
  • 1/2 level tsp salt

Marinated Mushrooms & Onions

  • 500 grams Finely slices mushrooms
  • 1/2 Thinly sliced onion
  • 1 Minced clove of garlic
  • 1 Lemon Juiced
  • 2 level tablespoons olive oil

Recipe's preparation

    Buckwheat Crust
  1. Place the buckwheat, chia seeds and tomato soaking water into the Thermomix Closed lid, process for one minute on sp7.

    Add the remaining ingredients and blend together, 30secs on sp 7. Spread the mixture in pizza shapes on baking paper, should make 5 good size pizzas. Dehydrate for one hour on 63 degrees, then reduce the heat to 46 degrees for approx five hours. The crusts should be crisp and easy to flip at this stage.

  2. Raw Basil Pesto
  3. Blend all of the ingredients together in the Thermomix,, Closed lid, 30 secs, on sp7

  4. Raw Tomato Sauce
  5. Place all the ingredients in the Thermomix Closed lid, and process for 10 secs on sp7.

  6. Raw Cashew Cheese
  7. Process all the ingredients in the Thermomix, Closed lid,, 14 secs on sp7.

  8. Marinated Mushrooms
  9. Combine all the ingredients together and leave to marinate overnight.

  10. To assemble the pizza, place a crust on a platter, or place, spread with raw tomato sauce, scatter with spinach leave, chopped raw avocado, slices of red pepper, and the marinated mushrooms. If you prefer your pizza warm, pop into the dehydrator for 15 mins on 63 degrees to warm through. ENJOY!
