Pumpkin

  • 750 grams butternut pumpkin, Chopped In Squares
  • 2 tablespoons olive oil
  • 1/2 teaspoon nutmeg ground

  • 1 large onion
  • 2 cloves garlic
  • 160 grams Baby Spinach Leaves
  • 12 eggs
  • 100 grams Self Raising Flour
  • 120 grams grated cheese
  • 100 grams ricotta cheese

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Pumpkin
  1. 1. Preheat oven to 200 degrees, line baking tray with baking paper

    2. Toss pumpkin with oil in and nutmeg, put on baking tray and season with salt and pepper

    3. Roast for about 30 minutes or until soft

  3. 4. Place onion and garlic in TM and chop for 3 seconds on speed 7

    5. Add oil and saute for 3 minutes on 100 degrees speed 1

    6. Take mixture and put in side bowl and toss the spinach through the mixture until wilted.

  4. 7. Add eggs into TM bowl, flour, greated cheese and salt and pepper and mix for 5 seconds on speed 3

    8. Reduce oven temperature to 180 degrees

    9. Toss pumpkin mix through onion mix, the spinach will wilt further

  5. 10. Place pumpkin mixture in oiled baking dish, pour egg mixture over top

    11. Sprinkle ricotta over the mixture, add grated cheese if desired 

    12. Bake in oven for 45 minutes or until browned

    This was delicious! So easy and so yummy. I added son sliced mushrooms before sautéing. Perfect side dish for a vegetarian. Will be making this again
