Tofu cakes
- 300 grams Firm tofu, cubed
- 1 red chilli, de-seeded
- 1 Stalk LemonGrass, chopped into 2cm lengths
- 1 2cm piece of ginger
- 60 grams plain flour
- 1 small bunch of coriander
- 1 clove garlic
- 2 Kaffir lime leaves
- 2 spring onions
Dipping Sauce
- 1 red chilli, de-seeded
- 1 clove garlic
- zest and juice of 1 lime
- 2 tablespoons coriander
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cummin
- 2 tablespoons soy sauce
- 3 tablespoons white wine vinegar
Rice noodle salad
- 300 grams Pad Thai Rice Noodles
- 1 handful green beans
- 1 Lebanese cucumber, cut into lengths
- 1 handful cashews
- 2 spring onions, sliced

Recipe's preparation
1. Put chilli, ginger, garlic, lemongrass and lime leaves in TM bowl and chop 3 secs, speed 7. Scrape down bowl and repeat.
2. Add spring onion and coriander to bowl. Chop for 2 secs, speed 5. Scrape down bowl.
3. Add tofu, flour and salt and pepper to taste. Chop 3 secs, speed 4
4. Form into 8 patties, then cover and refrigerate for 30 minutes. Fry in olive oil until brown and crisp.
1. Put chilli, garlic and lime zest in TM bowl and chop 3 secs, speed 7
2. Add all other ingredients and mix 3 secs, speed 4
3. Set 3/4 aside to dress the noodle salad and use the rest as a dipping sauce with the tofu cakes
1. Cook the noodles as per packet instructions. In the last 2 minutes of cooking time, add the green beans. Drain and rinse under cold water
2. Combine the noodles, beans, cucumber, spring onion and cashews along with 3/4 of the dipping sauce in a bowl and serve with the tofu cakes

Made these last night, my
Made these last night, my tofu was pretty firm so ended up 'chopping' it for about 4 times the amount of time as listed in recipe.
So delicious.
I had no tofu so I made these
