Thai tofu cakes with rice noodle salad

Tofu cakes

  • 300 grams Firm tofu, cubed
  • 1 red chilli, de-seeded
  • 1 Stalk LemonGrass, chopped into 2cm lengths
  • 1 2cm piece of ginger
  • 60 grams plain flour
  • 1 small bunch of coriander
  • 1 clove garlic
  • 2 Kaffir lime leaves
  • 2 spring onions

Dipping Sauce

  • 1 red chilli, de-seeded
  • 1 clove garlic
  • zest and juice of 1 lime
  • 2 tablespoons coriander
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cummin
  • 2 tablespoons soy sauce
  • 3 tablespoons white wine vinegar

Rice noodle salad

  • 300 grams Pad Thai Rice Noodles
  • 1 handful green beans
  • 1 Lebanese cucumber, cut into lengths
  • 1 handful cashews
  • 2 spring onions, sliced

Recipe's preparation

    Tofu Cakes
  1. 1. Put chilli, ginger, garlic, lemongrass and lime leaves in TM bowl and chop 3 secs, speed 7. Scrape down bowl and repeat.


    2. Add spring onion and coriander to bowl. Chop for 2 secs, speed 5. Scrape down bowl.


    3. Add tofu, flour and salt and pepper to taste. Chop 3 secs, speed 4


    4. Form into 8 patties, then cover and refrigerate for 30 minutes. Fry in olive oil until brown and crisp.

  2. Dipping sauce
  3. 1. Put chilli, garlic and lime zest in TM bowl and chop 3 secs, speed 7


    2. Add all other ingredients and mix 3 secs, speed 4


    3. Set 3/4 aside to dress the noodle salad and use the rest as a dipping sauce with the tofu cakes

  4. Rice noodle salad
  5. 1. Cook the noodles as per packet instructions. In the last 2 minutes of cooking time, add the green beans. Drain and rinse under cold water


    2. Combine the noodles, beans, cucumber, spring onion and cashews along with 3/4 of the dipping sauce in a bowl and serve with the tofu cakes

    Made these last night, my tofu was pretty firm so ended up 'chopping' it for about 4 times the amount of time as listed in recipe.

    So delicious.
