Variation Zucchini fritters (Kolokithokeftedes) (vegan)

Ingredients

Thermomix

  • 2 Zucchini, large, roughly chopped
  • 1 potato, roughly chopped
  • 1 onion, roughly chopped
  • 1 carrot, medium, roughly chopped
  • 2 tablespoons mint
  • 2 tablespoons Dill
  • 2 tablespoons parsley
  • 1 tablespoon lemon zest
  • 110 grams gluten free rice crumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper, black
  • 1/4 teaspoon nutmeg, ground
  • 2 tablespoons Flaxmeal
  • 110 grams buckwheat flour

For draining/drying shredded zucchini

  • 2 teaspoons salt

Frying

  • 2 tablespoons olive oil, and a little extra in between batches if needed

Recipe's preparation

    Zucchini fritters (Kolokithokeftedes)
  1. Thermomix:

     

    . Shred zucchini speed 5, 15-20 seconds. Wring out in tea towel, sprinkle 2 teaspoons salt and leave aside for minimum 20 mins.

     

    . Shred onion and potato speed 5, 15 seconds. Wring out in tea towel and set aside.

     

    . Shred carrot and herbs speed 5, 15 seconds.

     

    . Add remaining ingredients including the shredded zucchini, onion and potato, speed 4, 15 seconds. Repeat if necessary to combine well.

     

    . Place into a bowl and rest for 10 minutes or up to 3 days covered in fridge.

     

  2.  Frying:

     

    . Roll into small balls (just under 1/3 cup for each).

     

    . Add 3 tablespoons olive oil into frying pan and bring to medium heat.

     

    . Place balls into hot pan, gently pat into patties.

     

    . Fry 2-3 minutes on each side until crispy golden brown.

     

    . Add two tablespoons oil in between each batch.

Tip

Toast a piece of bread if you don't have breadcrumbs on hand. 

Grind your toast and your flaxseeds first off if you don't have flaxmeal.
