Vegan Alfredo

  • 2 cloves garlic
  • 20 g Evoo
  • 200 g cauliflower
  • 320 g Almond milk
  • salt and pepper to taste
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 240 g spaghetti

Recipe's preparation

  1. Mince garlic, 5 seconds, speed 5
    Scrape down bowl
    Add EVOO
    Cook, Varoma, 2mins, speed 1
    Add almond milk
    Cook, Varoma, 3.5mins, speed 1
    Add cauliflower and salt and pepper
    Cook, Varoma, 9mins, speed 1
    Add nutritional yeast and lemon juice
    Blend for 2mins, speed 9 (slowly increasing)
    Serve on your choice of pasta
