Recipe's preparation

Place onion in bowl, place on lid and MC, chop for 3 sec/speed 5. Scrape down sides with spatula. Add oil and sauté for 3 min/120*C/speed 1.

Add baby spinach. Cook for 2 mins/120*C/speed 5

Add sliced mushrooms. Cook 2mins/120*C/speed 5

Add cream cheese, salt, pepper and egg. Mix for 1 min/speed 2
. Pour into a medium container and stir through 250g grated tasty cheese.

Spoon filling onto each tortilla (approx 2-3tbsps). Fold to close and place in baking dish. Once all filled, pour Enchilata sauce over top. Sprinkle over last 250g of grated cheese. Cook for 25mins. Take out and serve.

Found this filling a little runny, so added fresh bread crumbs, was an easy recipe but a little rich for me, would love a vegetarian one with a bean or tomato base, thanks
