Ingredients

CHICKEN MARINADE

  • 800 gram chicken breasts, approx 4 breasts
  • 60 gram lemon juice, freshly squeezed
  • 1 tsp paprika
  • 1 tsp Oragano

SAUCE AND PESTO

  • 2 clove garlic
  • 1/2 red onion
  • 150 gram baby spinach
  • 1 bunch fresh basil
  • 100 gram feta
  • 45 gram almonds, or pecans
  • 60 gram Parmesan cheese, grated
  • 60 gram cream
  • 80 gram oil

SPAGHETTI

  • 500 gram spaghetti

Recipe's preparation

    CHICKEN MARINADE
  1. Slice each chicken breast into 3 pieces.  Combine lemon juice, paprika and oragano in a bowl; add chicken and marinate for approx 30 minutes.

     

    While chicken is marinating move onto making sauce.

     

     

  2. SAUCE AND PESTO
  3. Place onion and garlic in TM bowl and chop for 3 seconds on speed 7.  Scrape sides of bowl, add 20g olive oil and cook for 3 minutes at 100C on speed 1.  Add spinach and cook for 1.5 minutes at 100C on speed 1.

     

    Leave spinach mixture in bowl and add basil, feta, almonds and parmesean.  Set dial to Closed lid"Closed lid" and turbo 2-3 times.  Add cream and 60g remaining olive oil and mix for 5 seconds on speed 3.  

     

    Set aside in thermoserver

     

  4. COOKING CHICKEN AND SPAGHETTI
  5. Place 1 litre warm water into TM bowl.

     

    Place marinated chicken into the varoma dish and set into position.  Cook for 20-25 minutes at Varoma temperature on speed 2, turning once during cooking.

     

    While chicken is cooking, cook spaghetti on stove so it is all ready at some time.

     

    Place chicken and spaghetti into thermoserver with sauce and toss to combine.  Let it stand for 5 minutes, the sauce will thicken and coat the spaghetti.

     

    Serve with extra grated parmesan cheese.

Tip

You could add some zucchini or other vegies into the sauce after you have chopped the onion and saute for 4-5 minutes at 100C on speed 1.

    Amazing dish! My daughter loved it. Best pesto I've made thanks 🙏. We substituted the spaghetti for gnocchi was so creamy!

    Absolutely delicious and our favourite dish!

    I use lime juice instead of lemon now as I ran out once and will never go back!

    I only use around 650g chicken and pan fry it in some butter with all the marinade juices. It really adds to the flavour.

    I also leave out the onion to make it tummy friendly for my daughter and substitute almonds for pinenuts.

    It makes so much I just mix it all up in the pot I cooked the pasta in but everyone comes back for seconds so there's never much left over. This is a definite weekly dinner at our house

    I have made this a few times now and it is delicious. For the vegetarians in the family, I just leave the chicken out. So it is one meal that can cater for everyone. I often throw in some sun dried tomatoes for extra flavour.

    Turned out really nice. I cut the chicken into bite size pieces and fried on the stove in a large pan, then tossed through the cooked pasta and pesto, and it was yum. I used wholemeal spaghetti and it went together perfectly.

    Really nice flavour to this pesto sauce without certain ingredients being overpowering. I think the ingredients and method is spot on. Certainly one to add to my collections!

    So delicious! I shredded the cooked chicken before I added it to the pesto sauce. It's a lot of food (family of 5) but there's enough leftovers for a couple of lunches. Thanks for an awesome recipe.

    Mr 6 has low iron and he loves basil pesto. This was a great way to get some spinach into him (with lots of iron) and he didn't even notice the difference! Adding chicken also made it a more substantial meal.

    Yum!! I cut the chicken smaller and used tastY cheese as I forgot feta and it was still delish
