Chicken Cacciatore Risotto

Ingredients

  • 1 onion
  • 1 or 2 cloves garlic
  • 100-200 g bacon
  • 500 g chicken, diced
  • 300 gAborio Rice
  • 675 liquid Chicken Stock
  • 1 Tin Crushed Tomatoes
  • 1 Tblspn Tomato Paste
  • Parmesan Cheese to serve
  • 6

Recipe's preparation

  1. Blitz garlic, onion and herbs, 5sec, speed 5.

    Add Bacon, 3 sec, speed 4 (or until chopped to liking)

    Cook 3 mins, 100 degrees, speed 1

    Add butterfly

    Add all ingredients except chicken and cheese.  Cook 10mins, 100 deg, speed 1.

    Add chicken, Cook 10 - 15 mins, 100 deg, speed 1 ( check after 10mins)..

    Rest in thermoserver 5 mins and serve sprinkled with cheese, salt and pepper if desired.

    Kids loved it! I added a couple of handfuls of baby spinach leaves to the thermoserver and also used vegetable stock concentrate and 620ml of water. I would use a little less water next time. I also noted the comments above and used reverse soft speed. Thanks for this recipe!

    Used reverse, substituted 150gm of the water with white wine and added capsicum with the chicken and kalamata olives in the last three mins. Easy, yummy, weeknight dinner!

    Made this up for lunch today, well actually Thermo did, since I just added all the ingredients by stages.I had a punnet of mushrooms, so threw them in for good measure near the end.Luscious, hubby & son adored, even though I forgot about the parmesan until everyone had nearly finished!Just goes to show that this could be enjoyed even without the parmesan!!

    This too was my first meal in the thermomix mix. I was very impressed, although I wondered about reverse (and having not read these ratings) I followed the recipe and did not use reverse. I was extremely happy with my results.  Will be making again for sure.  tmrc_emoticons.)

    I cooked this dish tonight, taking into account everyone's comments regarding reverse, adding more veg, and I too used the veggie stock concentrate (only because I had just made a batch today).     The herbs I used were fresh basil, parsley and garlic chives.  Then I added some dried Thyme and accidently 'spilt' what I thought was far too much Oregano in (probably a tablespoon!) but it still turned out just beautiful!  I did use the reverse function as recommened by others above.  Oh, i also didnt have chicken stock so used water with 3 good desert spoons of Vege Stock Concentrate.

    We will definately be having this one again!!!! Party

    Lovely! Used the butterfly on reverse and added olives in the last couple of minutes of cooking and shredded basil when I rested it in the thermoserve.

    My kids and Hubby loved this, I just assumed I'd need the reverse setting (luckily).  I'm going to sneek in extra veges next time but overall we loved this recipe.  The parmesan is a must, really added to the flavour.

    yes, I also was surprised that it didn't say reverse... (just didn't read Ozamanda's comment before I made it!!). It was nice flavour, but not at all like cacciatore, missing half the ingredients I've always seen in traditional cacciatore recipes, and added the bacon, looking forward to playing around with it, adding some chilli, red capsicum, celery, red wine and olives!

    Big Smile Tried this as my second "Thermy" dinner and took above advice to use reverse function. Added mushroom, capsicum and zucchini. First time my kids have eaten ALL their dinner and asked for seconds. DELICIOUS!!!!

    I tried this one, and was surprised that it did not recommend reverse speed (for cooking the rice and chicken).  It was VERRRRY mushy.  Next time I will try it on reverse speed and see if it is better.
