Chicken & Sweetcorn Risotto

  • 1 brown onion, quartered
  • 2 garlic cloves
  • 20 g Butter
  • 2 skinless chicken thighs, cut into cubes
  • 150 g arborio rice
  • 400 g water
  • 2 heaped tsp Vegetable stock paste
  • 60 g frozen corn kernels
  • 50 g Strong cheddar cheese
  • 1 level tbsp fresh chives, chopped
  • 3 bacon rasher, rindless, chopped (optional)

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. 1. Place onion, garlic and butter into bowl and chop, 3 sec/speed 7. Scrape down the sides.

    2. Sauté 2 mins/100/speed 1. Add chicken and rice and cook 5 min/100/Reverse/speed 1. Scrape down sides of bowl.

    3. Add water and stock paste 12 mins/90/Reverse/speed 1. Add corn, cheese and bacon (if using) and cook 5 min/90/Reverse/speed 2.

    4. Add chives and mix 3 sec/Reverse/speed 2.

    5. Pour into a Thermo Server and allow to sit for 5 mins before serving.
