Mango Chicken Curry Risotto

Ingredients

Risotto

  • 1 brown onion
  • 1 cm ginger fresh
  • 1/2 red capsicum
  • 100 grams cauliflower
  • 1 carrot
  • 30 grams unsalted butter
  • 500 grams chicken breast, Diced
  • 1 can mango puree, 850g
  • 1 teaspoon Ground Coriander
  • 1 teaspoon ground tumeric powder
  • 2 teaspoons ground cumin
  • 1 teaspoon Minced chilli
  • 300 grams arborio rice
  • 200 grams frozen peas

Recipe's preparation

    Risotto
  1. 1. Grate Onion and Ginger, 4Sec, Speed 7.

     

    2. Add Capsicum, Cauli and Carrot, Grate 4 Secs, Speed 7.

     

    3. Add unsalted butter and saute 2mins, 100°, Speed 1.

     

    4. Add chicken and saute further 2mins, 100°, Speed 1.

     

    5. Insert Butterfly, add remaining ingredients except peas.

     

    6. Cook 15mins, 100°, Reverse, Speed 1.

     

    7. Add peas then cook further 5mins, 100°, Reverse Speed 1.

     

    8. Tip into Preheated ThermoServer and let stand for 5mins before serving.

Tip

Instead of Cauliflower you could use any other leftover veggies.

Alter the amount of Chilli to taste.

    Great flavour.

    I used 500g of fresh mango and added 250g of water

    I found the volume too great for my thermomix (TM51) and ended up cooking the risotto on the stove.

    We did enjoy the meal and have enough for another dinner.

    Ok what? Is it definitely 850g of mango? My thermie is bursting at the seams, I had to reduce my rice to fit it in.

    Very Yummy, used fresh mango instead of canned . As I had leftovers I made crumbed patties which were also great as another meal and taken for lunch and heated up.
