Satay Rice

  • 500 grams chicken thigh, Diced
  • 1 brown onion
  • 2 teaspoons curry powder
  • 1.5 --- cups rice
  • 2 carrots, Diced
  • 0.5 litres chicken stock
  • 1 can coconut milk
  • 1/4 cup peanut butter

Recipe's preparation

    Satay Rice
  1. Chop onion 10 seconds speed 10. Scrape down sides of bowl. 

    Add 1TBS oil. Cook 2 mins, 85, speed 3.

    Add diced chicken thigh. Cook 10 mins, reverse speed 2, 100 degrees.

    Add remaiming ingredients, place steam basket on top. Cook 20 mins, reverse speed 1, 95 degrees.

  • I used a clove of garlic in

    I used a clove of garlic in the initial stage and used arborio rice when I read the above comments.  I used only 1 cup chicken stock, 1/2 cup wine & 1/2 cup water and 1 tblspn vege stock concentrate instead of the 2 cups of chicken stock.  I used 1.5 tspn curry powder as it was for kids and also added in 1 cup peas to increase the vege count.

    I used the butterfly after the third step i.e. after the first lot of chicken cooking, and added the rice and curry powder and cooked it at 100 degrees for a minute on reverse before adding the rest of the ingredients, and increased step 4 to 15 minutes instead of 10 due to the use of arborio rice.

    Next time I would add the peas in the final 3-4 minutes of cook time as they were overcooked by the 15 minutes at the end.

    the kids didnt mind it but it wasnt bursting with flavour. Id probably add some garlic and a few other things next time. ALSO a "can" of coconut milk.. What size can? how many grams? id also work out the 1/4 cup of peanut butter in weight to make it easier. Thanks for a good basic recipe though that we can always add too.

    Delicious recipe! I cooked the chicken on reverse speed Gentle stir setting and if stayed nice and Chunky and used arborio rice. i also used a tablespoon of the TM vege stock with 500ml of water as I didn't have any chicken stock and just added a bit of salt and pepper. Highly recommend this recipe and it will be on our weekly meal plan for a while! Loved how simple it was.

    Flavour was nice. 

    Tried with arborio rice instead, thanks to previous comment. I also suggest adjusting speed settings at cooking chicken step down to speed 1 or even stir Gentle stir setting as found chicken went quite shredded and end texture not great (even in reverse).

    overall good and will try again. Thanks.

    Not bad.  A tip for new players, don't forget to switch to reverse or your chicken cubes turn to smoosh tmrc_emoticons.D  I also think next time I'll try it with arborio rice tmrc_emoticons.)  but thanks for the recipe tmrc_emoticons.D
