Ingredients
Spinach and Ricotta Gnocchi
- 80 g parmesan cheese cubed
- 250 g fresh baby spinach roughly chopped
- 250 - 300 g ricotta cheese, firm, homemade or storebought
- 2 eggs
- 320 g bakers flour
- 1/4 tsp Nutmeg
- 1 tsp salt
- 1/4 tsp cracked black pepper

- 1. Add parmesan cheese into the mixing bowl and Chop 10 sec/speed 8. Empty and set aside
- 2. Add baby spinach into the mixing bowl and Chop 5 sec/speed 9. Scrape around the mixing bowl.
- 3. Add Ricotta cheese, reserved parmesan cheese, eggs, flour, nutmeg, salt & pepper into the mixing bowl and Mix 5 sec/speed 3.
Knead 1 min using knead function. - 4. Empty the dough onto floured hosilicone mat or benchtop, knead lightly, add extra flour if the dough is soft. Divide the dough into 5 smaller rounds, roll each one out into a thin sausage shape and cup up to form gnocchi.
- 5. Cook gnocchi either in a large pot of boiling water to serve with sauce of your choice, or fry them on medium heat in a pan with some butter and oil and serve with fresh herbs and feta or can serve them topped with burnt Sage Butter and topped with parmesan cheese.
Tip
Gnocchi can be frozen in a single later on a tray, then transfered into ziplock bags and stored in the freezer until ready to use/cook.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
