Zucchini Pasta slice

Zucchini Pasta slice

  • 200 grams Tasty cheese, chopped
  • 2 med zucchini, chopped
  • 3 spring / green onions
  • 250 grams ricotta cheese
  • 180 grams Macaroni Pasta, boil until just cooked "al dente"
  • 45 grams olive oil
  • 70 grams mayonnaise
  • 4 eggs
  • 150 grams SR flour
  • salt and pepper to taste
  • sliced tomatoes

Recipe's preparation

    Method
  1. Preheat the oven to 160 f/f. Grease a slice tray.
    1. Add cheese to the bowl, blitz sp5/20 seconds, until grated. Set aside.
    2. Add zucchini & spring onion, sp5/15 secs.
    3. Add Ricotta, 120g cheese, macaroni, oil, mayo, eggs, flour and S & P.
    4. Blend sp4/15 secs/reverse until combined. Use your spatula to help if necessary.
    5. Spread into a lined slice tray, smoothing it out. Sprinkle with remaining cheese.
    6. Spread with sliced tomato. Sprinkle again with S & P if desired.
    7. Bake for 45-55 minutes, or until golden and set.





    Serve with a fresh garden salad.
    Can be frozen
    Enjoy

    We weren't certain from the recipe whether to cook the macaroni first (we did however we think it may be better if we undercooked it) and what oven temperature to use (we used 160 degrees celsius fan forced). Having made it to the recipe, we quite liked the end result although it didn't have much flavour so we'll try adding more flavour enhancing ingredients next time. Thank you for the recipe.

    Delish. Will make again. I added 200g of bacon. I put the pasta in the baking dish after its cooked as I find it breaks up in the next mixing steps.
