Tip
If you use Gluten Free flour, it makes an even lighter, shorter Shortbread. And I thought I couldn't improve on this recipe. I made this recently for my Gluten free friend and really enjoyed how yummy it was. Try it!!! You won't be disappointed.

I made this recipe a few times last Xmas and I've got my first batch for Xmas now in the oven. Lovely recipe. Sometimes I do mix ins, today I've done half with white choc and cranberry and the other half with lemon rind and pistachio. Thanks for a great recipe.
I always double batch and freeze some cooked for gifting. These thaw at room temp and taste just as good as fresh out of the oven.

kenwood: Different Brand of Butter or GF Flour? Sounds like there a fraction too less fat relative to the flour absorption ability.
The GF flour mixture may have a different binding ability as there's LOTS of grain/seed variables that can be used. OR Different brand butters will have different water percentages and the water doesn't hold a shortbread mix together. 🤓

Just made this today - absolutely divine! So so so easy! I pushed mine into a 20cm tin and then dusted with caster sugar afterwards. I think I need to cook for longer as it was a bit soft still but divine!
