  • 200g g sugar

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Method
  1. 1. Preheat oven to 180°C and line a 16.2cm x 26.8cm x19cm loaf tin with baking paper.
    2. Add cubed butter to your mixing bowl Closed lid and Melt 4 mins/60°C/speed 2.
    3. Add all remaining ingredients then combine 10 sec/speed 4 on reverse Counter-clockwise operation.
    4. Scrape down the sides of your bowl then mix 5 sec/speed 4 reverse Counter-clockwise operation.
    5. Pour mixture into prepared loaf tin. Sprinkle with Fresh Raspberries (optional).
    6. Place loaf in the oven and cook for 1 hour.
    7. Remove from oven after 1 hour or when golden brown and skewer comes out clean when placed in the centre. Cool on a cooling rack.
    8. Serve while still warm or allow to cool completely.
    9. Store in an airtight container in the pantry or a cool dry spot for up to 1 week. If fruit has been added to the loaf store in the fridge for up to 1 week.

Tip

- Raspberries can be substituted with any fruit of your choice.
- Fold Raspberries or chosen fruit through the mixture between step 4 & 5 to create a coconut and fruit loaf.
- Also delicious made into cupcakes. Reduce cooking time to 15 minutes and remove when golden brown.
- Serve while still warm with cream.
