Hit the Milk - Hot Chilli Sauce

  • 5 g olive oil
  • 2 garlic cloves, peeled
  • 1 onion, peeled and quartered
  • 1 carrot, peeled and roughly chopped
  • 400 g pure orange juice
  • 15-20 Mixed hot chillis, roughly chopped, seeds and all
  • 3 tablespoons lime juice, freshly squeezed
  • 3 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 3 tablespoons Ground Coriander
  • 3 tablespoons raw sugar
  • 1 teaspoon cornflour
  • 70 g goji berries, dried

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Hit the milk - A Hot Sauce with flavour, that'll have you reaching for the fridge!
  1. Add oil, ground ginger, ground coriander and garlic to TM bowl

    Chop 3 secs on Speed 7, cup on

    Sauté 3 mins, 100°C, speed 1, cup on

    Add the onion and carrots

    Chop 3 secs, Speed 7, cup on

    Add OJ cook 20mins 100°C, Speed 1, basket on

    Add Chillies, Goji Berries, sugar and salt to the mix

    Blend 1 min. gradually increasing to Speed 9, cup on

    Pre-mix and add lime juice, apple cider vinegar, cornflour. Cook 6 mins 100°C Speed 2, basket on

    Pour into sterilized bottles or jars and seal

    Keep refrigerated or freeze.

Tip

Variation of Dene M's Belizean Style Habanero Sauce and my favourite brand of Australian hot sauces from the lovely Renee Bunster.

I edited this recipe for the TM because my friend had grown 15 scotch bonnets, and I had 2 birds eye & 3 cayenne. I used my favourite sauce base of orange juice and berries. The result was tasty and really hot.

Play with it. I thought the flavour of this one was great, but tonight I am making it Birds Eye based with any other chillies I can find.
