AIP Roasted Beetroot Dip

Ingredients

  • 900 g Beetroots, Cut into chunks 4-5cm
  • 1 tbsp coconut oil
  • 80 g olive oil
  • 60 g filtered water
  • 1 tbsp apple cider vinegar
  • 1 whole lemon, Peeled
  • 2 cloves garlic
  • 1/2 tsp Rock or Himalayan salt

Recipe's preparation

  1. Preheat Oven 200 Degrees

  2. Cut up Beetroot and place into baking tray with 1 Tablespoon of Coconut Oil

    Place into oven and bake for 2 minutes

    Then carefully open door and coat beetroots with the melted Cocounut oil

    Close the door and bake for 1 hour 

  3. Wheen Beetroot is cooked take out and allow to cool for 10-15 minutes

  4. Add the rest of the ingredients to the TM Bowl 

    Olive Oil, Water, Apple Cider Vinegar, Lemon, Garlic, salt and Slightly cooled Beetroots

  5. Blend together 10 Seconds, Speed 8

  6. Scrape down the sides

  7. Blend together 10 Seconds, Speed 8-9

  8. Serve immediatley or allowing to cool in the fridge till ready
