If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1) Core and quarter apples, place in "Closed lid" along with lemon juice and brown sugar then blend for 7 sec/sp9.
2) Scrape sides and cook for 8 mins/80 degrees/sp3.
3) Blend for 10 secs/sp9. Scrape sides.
4) Cook for a further 5 mins/80 degrees/sp3.
5) Place into sterilised jars, will keep for approx 4 weeks in fridge.

Tip
I prefer granny smith apples because I like the tartness but you could use any apple and maybe use a little less sugar. would be perfect to freeze in portions aswell.

Love this sauce! Used my home grown Gravenstein apples. Over ripe so used bout 20g sugar to compensate for the ripe sweetness of the apples. Lemon juice provides a fantastic balance to flavour. Have made with both skin left on and also peeled. No discernable difference. Have also doubled the recipe and added half the cooking time on and its great. Popped some into jars and boiled to preserve and also popped some cooled sauce into ice cube trays to freeze to use with roasts (as only two of us in the house) Thanks for this recipe. It's a keeper
