- 500 g shortcut bacon, cut into quarters

- 1. Add the bacon, garlic and onion to the mixer bowl and chop 4 seconds, speed 5. Scrape down and add oil. Cook varoma, 15 minutes, speed soft,
2. Scrape down and add the remaining ingredients. Cook varoma, 20 minutes, speed soft, , with the simmering basket on top instead of the MC.
3. Scrape down the bowl and add 1/4 cup of water and cook for 15 minutes, varoma, speed soft, , with the simmering basket on top instead of the MC.
4. Once cooked transfer to steralised jars and allow to cool on the bench before storing in the fridge..

Store in the fridge for up to 3 months.
For a smokier flavour dice the bacon and fry on a pan until crispy. Chop the garlic and onion in the Thermomix and cook for 5 minutes with the oil before adding the crispy bacon and continuing from step 2. At the end you may want to puree the jam of cooking this method te reduce chunkiness.
