Bangin' Beetroot dip!

Ingredients

Dip

  • 1 Beetroot raw
  • 2 cloves garlic
  • 20 g water
  • 100 g cream cheese
  • 50 g raw cashews
  • 1 bunch coriander
  • Salt and Pepper - To Taste

Recipe's preparation

    Beet it!
  1. Throw in chunks of beetroot, garlic and water. No need to remove skin of beetroot. 5 minutes/ 70 degrees/Speed 1.

  2. Add remaining ingredients. 30 seconds/Speed 7.

  3. Serve warm with either crusty ciabatta, put in cob loaf or serve with crackers.

Tip

Great as a healthy spread on toast or on a salad sandwich. Yum served warm or cold. You can also omit the cooking of the garlic and beetroot and enjoy it as a raw dip or spread. For a dairy free alternative use coconut milk or cream.

    Very yummy, I don't eat corriander so just left it out and it still tasted amazing tmrc_emoticons.) Also couldn't be bothered with just using half of my cream cheese block so put the whole block in.
