  • 1 400g can diced tomatoes
  • 100ml bourbon, (optional)
  • 1 red onion
  • 2 cloves garlic
  • 1tsp sumac
  • 2tsps smoked paprika
  • 2tbsp Cider Vinegar
  • 2tbsp Worcestershire sauce
  • 2tsps brown sugar or honey
  • 1\4 tsp salt

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Chop onion and garlic 3 secs sp5. Scrape down sides.
    Add spices and oil and cook 3 mins 100 sp 1

    Add rest of ingredients except bourbon.
    Cook 25 mins Varoma sp 2 with basket on top instead of MC
    Add bourbon cook 10 mins varoma sp2
    Replace MC and puree 30 secs p 5 slowly turning to sp 9.
    Pour into sterilised bottle and when cool keep in fridge.

Tip

If you want hot sauce add a chilli when chopping garlic onion.
Apart from using as a condiment, use as a marinade or basting sauce for meat, ribs or chicken.

    I've just made this sauce and it's very thick, I feel there might be some liquid missing, it's more like a paste.
