If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place sugar and lemon zest in TM bowl "Closed lid" , 10 seconds, speed 10.
Add peaches or apricots and cook 50-60 minutes, 100 degrees, speed 2.
Add Jam Setta with pectin and cook 5 minutes, 100 degrees, speed 2.
Add brandy and cook 5 minutes, 100 degrees, speed 2.
Check to see if setting, if not add an addtional 5 minutes, 100 degrees, speed 2.
Pour into sterilised jars and seal.

Tip
If you like a chunky jam use "Counter-clockwise operation" speed 2 during cooking.

I've been making this recipe in bulk this month. Some by themselves and some with peach/apricot together. Each time without brandy though. I ran out of jam setta for last 2 batches so used half a lemon.
Each time I cooked the fruit without the MC on - Incase anyone wondered if on or off.
love it. Our trees are so plentiful this year and this has been a nice recipe to use for the year.

Made this just recently with peaches and...
Made this just recently with peaches and apricots.... it was simply divine! The lemon just took the super sweet edge off and gave it a burst of freshness. I can't stop eating it and I'm about to make a second batch trialling apricots and nectarines.
