  • 80 g Pecorino/Parmesan Cheese
  • 1 clove garlic
  • 1 bunch coriander, Approx 20g
  • 1 bunch basil, Approx 20g
  • 100 g Cashews, raw, unsalted
  • 5 g balsamic vinegar
  • 60 g olive oil
  • 1 red chilli

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place Pecorino cheese and garlic in the mix bowl. Place MC into lid.  Chop 8secs/speed 8

     

  2. Add cashews, basil, coriander, chilli, balsamic vinegar, olive oil and salt and pepper.

     

  3. Place MC in lid, combine 5secs/speed 5.  Repeat until desired texture is achieved.

Tip

 

This will create a dry style pesto great with crackers or on sandwiches.  For an oilier consistency for use with pasta or salads – increase olive oil to 80-100g depending on preference.
