Chicken Liver and Pistachio Pate

Ingredients

  • 100 g pistachios, shelled, or other nuts or no nuts
  • 600 g chicken livers, washed and dried
  • 1 onion, large
  • 2 cloves garlic
  • 300 g Butter
  • 1 bouquet garni
  • 1 sachet Salt and pepper
  • brandy, or other liqueur

Recipe's preparation

    Chicken Liver and Pistachio Pate
  1. Chop pistachios for about 4  seconds on speed 6.  Set aside.

  2. Chop onions and garlic  for about 5 seconds on speed 6.

  3. Add 30 gms of butter. Cook 3/4 minutes  or until soft on 100 speed 1.

  4. Add chicken livers, bouquet garni , salt and pepper COOK for about 8 minutes at 100 soft speed and REVERSE.

  5. When livers are cooked REMOVE BOUQUET GARNI.

  6. Add remaining butter and brandy and process for 3 seconds on speed 3.

  7. Add the pistachios and pour into ramekins/pots or make a big one for party.

Tip

You can freeze this pate

I have been making this for years as my party piece.   It is easy as, just remember no matter what weight of chicken livers use 1/2 that weight in butter.  Don't think about it just do it.  Decadent.

    Apologies, I misread the recipe where it stated 300g butter not 30g as I previously stated. However would still like to know how much brandy. Would love to make this tonight or in the morning

    The recipe says 30g butter which is used in the first stages of the cook and later it says add the rest of the butter ? How much more butter is added. Also it doesn't state how much brandy to use

    I'm really keen to make this if you could let me know the quantities above.

    This recipe makes a large quantity of paté, but I don't think it's going to make it to the freezer!

    I mixed pistachios and macadamias, and used pedro ximenez sherry for the liquor. What a divine paté; it's going to be my 'go to' recipe from now on. Thank you! tmrc_emoticons.)

    This recipe is to die for, I have some many postive comments and as a new thermomix user it is so easy.  I freeze it as if left in the fridge it would be gone in no time. Love it, thanks so much for sharing.

  • I was a bit disappointed with

    I was a bit disappointed with this pate.  I froze most of it for Christmas and kept a small container in the fridge however once started it seemed to turn to water.  Any idea what could have happened.  I did use more livers  than the recipe suggested but adjusted everything as stated in the tips.
