Ingredients
Chilli Jam(Hoi An Chilli Jam taken from SBS food Magazine)
- 30 grams roasted salted peanuts, Optional
- 30 Birdseye chillies, Remove stalk
- 6 long red chillies, Remove stalk
- 4 cloves garlic
- 125 grams brown sugar
- 110 grams castor sugar
- 125 grams apple cider vinegar
- 1/8 tsp sesame oil
- 60 grams fish sauce

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Chop peanuts 3 sec spd 5.
Take out, set aside, and wash bowl.
Place chillies and garlic in "Closed lid" process 3 sec spd 7.
Watch out the aroma will be huge!
Scape down.
Add sugars, vinegar and cook 30 min V 100 deg speed 2.
Add fish sauce, peanuts(if you are adding) and sesame oil.
Mix 8 sec R spd 2.
Keep in refrigerator.
Lasts ages.
