Compound butter
- 250 g unsalted butter
- 4 cloves garlic
- 1 level tbsp fresh parsley
- 2 level tbsp Dijon mustard
- 1 heaped teaspoons lemon juice
- 1 level tbsp fresh rosemary
- 1 level tsp paprika
- 1 level tsp salt
- 1 pinches cracked pepper
- 1/2 level tsp fresh thyme, optional
- 1/2 level tsp crushed chili paste, optional
- 1/4 level tsp chili powder, optional

- Add all ingredients except butter to mixing bowl. Mix for 3 seconds, speed 7, MC on.
- Add chopped butter to mixing bowl. Mix for 2 minutes, 50 degrees, speed 2.
Check butter has softened and mixed. (DO NOT MELT the butter). Mix for 30 seconds, 50 degrees, speed 2 if necessary. - Wrap in parchment or baking paper, leave in fridge for two hours until firm.

Can slice and use as a spread on buns, bread, add to baked potatos or corn cobs, or melt and use as dipping sauce.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
