- 2 piece fresh ginger, peeled, Two Large Knobs
- 250 grams water
- 350 grams raw sugar
- 1/2 lemon, juiced

Recipe's preparation
- Place fig pieces and water into TM Bowl .
Place lid on TM Bowl, set timer to 10 mins 100* speed 1 - leave MC in.
When finished, puree on speed 7 for 10 seconds.
Weigh sugar and add lemon juice
Place lid on TM Bowl and blend on speed 4 for 30 seconds
Set timer for 30 minutes, varoma temperature, speed 3 with strainer basket on top of lid (to prevent splatters)
Cooking time can be by extended (10-20 minutes) and this will give a thicker more solid paste.
When cooking time has finished check for setting point – the paste should be looking thick and when a small amount placed on a ceramic plate gells – it is ready to pour into your chosen mould.
Pour paste into baking paper lined square cake tin 18cm x 18cm or similar. The smaller the dish the thicker the paste. Alternatively, silicone moulds or small serving size containers with lids.
