Ingredients

2 portion(s)

  • 600 grams green apples, peeled, quartered, deseeded
  • 1 lemon, juice only
  • 660 grams sugar
  • 1 stick cinnamon
  • 320 grams dried figs
  • 125 grams walnuts, toasted if you like

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Chop walnuts for 1-2 sec / Turbo. Set aside.
  1. Chop apples for 15 sec / sp9 for smooth puree. Set aside.
  2. Add figs, chop 1/3 at a time so not to overload the blade. 4sec / sp7. Add the other handfuls and repeat. No need to remove.
  3. Combine all ingredients except walnuts. Add agar agar powder at this step if using. Replace mc with tm basket. Cook for 30min / Counter-clockwise operation / 100 degrees / sp 2.
  4. Simmer for a further 30min / Counter-clockwise operation / 98 degrees / sp2
  5. if thicker consistency required, cook a further 5min / Counter-clockwise operation / 100degrees / sp2
  6. Add walnuts and stir through for 10-15sec / Counter-clockwise operation / sp2. Pour into prepared muffin tins or jars and allow to set overnight in the fridge.
  7. Serve with cheese and lavosh or crackers. Stays fresh for months. Great gift!

Tip

This paste sets soft but firm in consistency. It will keep the shape of a muffin tin for exaple, or just set it in prepared jars or containers if presenting as a gift.

    Yum yum yum. I’ve made this for Xmas present but I don’t think to many people will receive it lol. I did leave out the agar agar cause I didn’t have any but I just cooked it a bit longer.

    I'm not sure it has the same effect. Agar is used to thicken it. It's also much cheaper to purchase. You can use it many dishes.

    Xanthum gum would work too I suspect although I havent tied it.
