Recipe's preparation

  1. Closed lid"Closed lid" 1.Select 5 or 6 quinces depending on the size.

    2. Wash the fur off the quinces and peel keeping all the peels in a separate bowl.

    3. Once the quinces are peeled cut them into quarters. Remove all of the remaining core and add to the peel in a separate bowl.

    4. Cut the quinces into 2cmx2cm chunks and place them in the Varoma basket ready to be steamed.

    5. Peel 1 lemon and place the lemon peel into the same bowl as the remaing quince peel. Save the remaining lemon for juice later on in the recipe.

    6. Place all the peel and the cores into the TM bowl and add 600 mls of hot water. Blend for 30 sec/speed 10.

    7. Removing the measuring cup, Place the Varoma dish on top the the TM lid and steam the quinces for 25 min/Varoma/speed 3

    8. Blitz the peel and core for a further 15 sec/speed 10.

    9. Remove the Varoma dish and keep cooked quinces in a bowl.

    10. Pour the cooked peel and cores into a bowl lined with cheese cloth or muslin cloth and place in the fridge to cool. This liquid contains pectin which will make the quince paste set.

    11. Once cooled, squeeze all of the liquid from the Muslin cloth into a separate bowl. Discard the remains of the pulp into your green waste.

    12. Weight the cooked/steamed fruit and the liquid separately.

    13. Add 900 grams of cooked fruit and 600 grams of the liquid into the TM bowl. Add the juice of 1-2 lemons. Blend for 30 sec/speed 7. Remove the Varoma dish and keep cooked quinces in a bowl.

    14. Add 1kg of sugar to the TM bowl(approx 75% of the combined weight Is sugar)(divide combined weight by4x3) Mix for 25 sec/speed 7.

    15. Cook for 90min/ Gentle stir setting"Gentle stir setting" Varoma/reverse speed 2.5. Replace the measuring cup with the Varoma basket to prevent any hot splashes.

    16. Once the fruit is cooked, it should look a red ruby colour. If not ruby, place lid back on and cook for a further 10 min/Varoma/reverse speed 2.5

    17. Place the quince paste into small plastic cups or containers. Once cooled, place into fridge. Store in fridge for approximately 6-9 months.
