Irish Curry Sauce

  • 150 g onions, peeled and quartered
  • 200 g apples, peeled, cored, quartered
  • 2 cloves garlic, peeled
  • 3 cm ginger, peeled
  • 3 tbsp oil
  • 2 tbsp curry powder
  • 2 tbsp plain flour
  • 500 g Liquid Chicken Stock
  • 1/4 tsp fine sea salt
  • 1 pinches ground black pepper
  • 1 tsp ground turmeric
  • 1 tsp cumin seed, ground
  • 1 tsp coriander seeds
  • 1 tsp ground cinnamon
  • 1 tsp Worcestershire sauce
  • 2 tsp sugar
  • 1 tbsp tomato paste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Place onions, apples, garlic, 3cm ginger and oil in mixing bowl then chop 5 sec/speed 6. Sauté 10 min/100°C/speed Gentle stir setting. Scrape down sides of mixing bowl with spatula.
  2. Add curry powder , 1 tsp turmeric, 1 tsp ground cumin, 1 tsp coriander seeds, 1 tsp ground cinnamon, and flour then mix 10 sec/speed 3.
  3. Add stock, salt and pepper then cook 10 min/98°C/speed 0.5. Blend 10 sec/speed 9
  4. Add 1 tsp Worcestershire sauce, 2 tsp sugar, 1 Tbsp tomato paste, 2 min/98°C/speed 2
  5. Blend Blend/1 min or blend til smooth by gradually increasing from speed 5 to 9 over 1 min.
